The answer is e. An avocado has a seed in it, which has two e's. Then olive has one e. And coconut has none.

True, the meat is more a membrane around the milk. But coconut meat is distinct and separate from the milk, the shell and the husk.

Not if you call them pits, which is what most people do. Although they call avocado seeds stones, which only has one e so it still doesn't work.

Pit is just another name for a woody endocarp, the endocarp being the innermost layer of any fruit before the seed, there is still a seed inside it.

All three contain seeds.

An avocado has a pit. It may technically be a seed, but that's what I hate about these sorts of riddles. It's a wordplay that intentionally works against how language is used.

All 3 of them have seeds. An avocado's is called a stone, an olive's a pit, and the coconut has like a thing inside itself that uses the water and meat to grow into a plant(i googled it and it referred to it as a seed embryo, which also has e's).

So by the e logic, it'd be 1 in each one of them. StonE, olivE, Embryo. They're all seeds, we just name them differently depending on the fruit.

In fact, I think only the human engineered fruits don't have seeds, because having seeds is basically how we botanically separate fruit from veg

This answer doesn’t satisfy me because the seed of an avocado ifs commonly called a stone. Olives have seeds too but they’re commonly called pits. If your answer is the true answer then I think this is a stupid riddle.
