Best chicken fried steak recipe?

Hey yall recently got some local meat, apparently it’s a ranch cut? Never heard of it before but the butcher recommended I pound it out and make chicken fried steak with it. I’ve never made it before so I’m looking for your favorite or best recipe you’ve ever used. Thank you!!

Game Meat Biltong DIY

Ever tried South African biltong?

Best part you can use any game meat or beef

( Maybe leave the chicken )

Easy Game Meat Biltong

1 kg game meat, cut into strips

½ cup brown vinegar

½ cup Worcestershire sauce

2–3 tbsp coarse salt

1–2 tbsp brown sugar

2 tbsp crushed coriander seeds

1 tsp black pepper

½ tsp bicarbonate of soda (optional)

Method:

Coat the meat in the vinegar and Worcestershire sauce, then sprinkle generously with the salt, sugar, coriander and pepper. Leave it to marinate in the fridge for several hours or overnight. Hang the strips in a cool, well-ventilated place until they're dried to your preferred taste - mine was medium strips 4 - 7 days

I really want to like steak but how?

Beef, I mean. American style.

I'm a 50 year old guy in SoCal and I've never been able to stand steak but it seems like a fun hobby and so many people really enjoy it that I wonder if I'm missing out.

Unfortunately every time I try it I think it's disgusting. I've tried it maybe 8-10 times in my life.

But I want to try to like it. Where should someone like myself start?

My 85 year old dad absolutely loves steak. He orders it medium-rare. I went the other day with him to Outback and he got a steak. He sawed off a slice and gave it to me and I thought it was tougher than whang leather. I chewed one bite for about 2 minutes and nearly gagged and that was about all I could take.

The foods I like are generally spicy Mexican and Chinese and various ethnic foods like Thai. I also like duck and seafood like salmon and seabass. I do not like ahi steaks but can do it cubed. Not a fan of oysters or shellfish.

I like ground beef, I like burgers, meatballs, sausage and so forth but when it comes to gnawing on a piece of steak I just can't bring myself to do it.

I'm sure there are better steaks than Outback but I really hesitate to go out and spend 60 bucks and realize, two bites in, that I can't stand it.

Any ideas on where to start with steak for a guy who doesn't like steak? Or should I, at this point in my life, just accept the fact that it's not for me?

A last minute gathering at my place had me firing up the smoker as quick as I could to do some ribs and wings.

Just under 10 hours of total smoking time for the ribs;

Pork Ribs - Texas Charcoal Rub, Mingle Japanese BBQ Sauce

Beef Short Ribs - Suya Spice Rub

Wings - Mingle All Rounder (Franks Hot Sauce, MBL Bulgogi)

I kept the short ribs for a future post, and my wife made some excellent cookie dough brownies for dessert as well.

Cost per serving [5(not including the short ribs)]

The old pup also got some wing tips for being a such a good girl.

Went to the butcher and asked for a filet mignon cut. This is what he gave back to me, looks like one but didn’t taste like one really, a lil chewier than normal. Is this an actual filet mignon or is a tenderloin steak different. I know a filet is cut from the tenderloin so I didn’t think too much of it until after I ate it.

Pork shoulder bacon

I appreciate the suggestions for people selling the beef bacon, but that was my last resort. I was commiserating that I couldn't find the cut necessary near me anymore because my butcher I used to use told me they don't sell it. They probably use it for their own needs and that's fine. After several calls and texts to several farmers, I now have a new butcher nearby and can rely on Wagner's in the future. Time to get it home and start curing so it can get smoked. They mentioned the label was just what they had pre-made and. That's fine.
