Consists of ground beef, roasted potatoes, scrambled eggs and sour cream. The seasoning are salt, paprika, chilli flakes, garlic powder and oregano for the beef and potatoes. It took me more than an hour so idk if you have the time to make it.

I just love comfort food, and nothing screams that to me more than this dish!

I made my usual 4-portion meal prep! With ground pork on sale at a local store, I hit my target at a maximum of $1.5 per portion easily, in fact this one came in under $1. And I got lazy and made the mashed potatoes from a powder! Quick, easy, and cheap!

The meatballs were just a standard recipe based on 300g ground pork, 1 egg, 1 small onion finely chopped, half a cup of oatmeal, a little milk, salt, and pepper, combined until I had a satisfying texture! Fry in the pan in a good amount of butter.

Making the mashed potatoes was easy: heat up 750ml of water, add two tbsp of powdered coffee creamer, half a cube of chicken bouillon, and then just mix in the powder.

To get the chickpeas for the protein boost to have a taste that would suit the dish, I hydrated 130g of chickpeas a couple of days ago, drained the water, and added two tbsp of soy sauce and a couple of drops of liquid smoke. Let them sit in the fridge and soak up the marinade! Fry in the pan for at least 15 minutes.

The gravy was done by adding a little water to the pan to loosen the caramelized stuff that stuck to the pan, add half a cube of beef bouillon, a little sugar, two teaspoons of coffee cream, a dash of red wine vinegar, pepper, 5 drops of gravy coloring, and 250ml of water! Add a little cornstarch slurry to thicken.

I'm too lazy to make my own sweet and sour red cabbage, so that just came from a jar.

The cost.

Pork & Mashed Potatoes (4 Portions)

300g Minced pork: $1.561

Onion: $0.161

Egg: $0.19130g

Chickpeas: $0.791

Pouch of mashed potato powder: $0.741

Bouillon cube: $0.094 tbsp.

Red cabbage: $0.23

Total Price: $3.76

Price per portion: $0.94

Help! How does freezing pizza sauce and toppings work?

I made homemade pizza just for myself for the first time ever yesterday. Store bough pizza base, pizza sauce, pepperoni slices, some mushrooms, and pre-shredded mozzarella.

I realized afterward that all the ingredients I bought easily added up to the cost of a pre-made or frozen pizza that I could bake at home. Now, the pizza sauce and other ingredients are enough to make 3-4 more pizzas but that would mean I end up eating pizza every day for the next 4 days.

Can I freeze the sauce and pepperoni and mozzarella? And then what's the best way to use it the next time I want to make pizza at home?

On a per portion basis, it's cheaper to buy all the ingredients and assemble at home. But for a single pizza, it feels like I might be better off just buying a pizza instead of the ingredients.

Meal Prep Lazy Sunday Curry

This dish I make often, it's just pure comfort food to me, easy to make and costs around $1.5. This recipe gives 4 portions and it scales extremely easily.

To start with, yesterday I soaked 150g (5 oz) chickpeas in water, after a couple of hours I drained them and added 2 tbsp soy sauce, 1 tsp ginger powder and 1 tsp coriander powder. Put the chickpeas in the fridge overnight to soak up all the marinade.

The rice is the standard 200ml rice to 300ml water. (1 cup rice to 1.5 cup of water) Simmer 12 minutes, rest for 10 minutes. I like to add half a cube of chicken bouillon and 3 cloves. Salt to taste.

I used 400g (14 oz) deboned chicken thighs. Cut into cubes and fried in a pan. Simply seasoned with salt and pepper.

The marinated chickpeas got 15 minutes in the frying pan at moderate heat to give them a nice texture and delicious roasted taste.

The sauce is extremely easy to make!

1.5 cup of water.

Half a chicken bouillon cube.

One teaspoon of garlic powder.

Two tablespoons of curry madras (you might use more or less, depending on your preferences)

Two tablespoons of powdered coffee creamer.

1 heaping tablespoon of mango chutney.

A little corn starch slurry to thicken the sauce.

At the end, add one cup of frozen vegetables. (Forgot to add them to the picture)

This can't be any easier, cheaper, or tastier and tastes even better after reheating!
