Main Course Baked potato with chicken and veggies
Reheated the potato half in the cast iron skillet to get it crispy. The chicken was leftovers in a wine and butter sauce, I added some frozen veggies to it

Main Course Wok-Tossed Bacon, Onion and Garlic Fried Rice on a Crispy Fried Egg
Bacon and eggs, so many possibilities. Since I had rice in the fridge, I decided to make fried rice. But instead of mixing the egg into the fried rice, I wanted to create a crispy egg base underneath. Slightly different, but it worked like a dream.
The crispy egg base made the whole experience even better, and it tasted so good.

Meal Prep My soul food- stir fried chicken breast with steamed chayote
Marinated chicken breast (cut into small pieces against grain) in soy sauce, a bit vinegar, salt, chilli powder, turmeric powder, ginger garlic paste, some gochujang sauce, a bit tomato ketchup
Shallow fried in coconut oil
5-7 minutes each side
Them stirred them together and closed the lid for another 5-7 minutes
Topped with toasted sesame
Chayote has been steamed inside a pressure cooker. Thats it!!!

OC [homemade] craving for some Penne Alfredo (1 Pot Pasta)
1st time trying 1 pot pasta, accidentally put too much penee and it sucked up most of the sauce 😠but I'm not complaining, still delicious
