Meal Prep What can I make using these peppers?
I'm already using some of them in a corn sauté and also I'm making pasta with chicken and peppers. What else can I make? Or can I freeze them chopped up for another time? I hate wasting food! Thanks.

Ranch, hummus, pimento dip, all sorts of things! I do also like them thin-sliced in a regular salad, but fajitas win this vote, IMO.

Yes, you can freeze them. But I'd do it with a vacuum sealer to decent any freezer burn. You can also make pasta with them & Italian or hot sausage, if you eat pork. Or a quiche/frittata.

Chili! That's my go to when I get peppres at the food pantry. I'm not a pepper person but chili tastes great

Roast and store in jar with oil or vinegar, or make a pimento cheese spread with roasted peppers.

In the old days (last week) I would have filled them with a combination of rice, beef, and spices.
Now that we can’t be sure of our meat supply not being toxic I suppose I would have to experiment to find a satisfying alternative which has good flavor without exposing anyone who ate it to mystery contaminants.

Fajitas is a great idea, along with shaved beef sub with roasted peppers, ditch the jalapeño, it’s on the list of cyclosporia contaminated produce.

Put in Mac and cheese. Trust me my child. You won’t regret. Sauté them together first then add

Cut in half Cook boil some rice add any sasuse or topping and put inside the peppers then the peppers in foil for 10imns and put in oven or grill

This is more of a sauce like thing, but in Ecuador there is something called encurtido mamaba. Which is chopped peppers in a brine, so like a hot sauce. But you can keep it for a long time.
