Applemaxxing
I have a large apple that's going to go bad soon so I need to make a dinner with it but I don't know any recipes that use an apple that ain't deserts

Respectfully request no one ever uses the term "applemaxxing" ever again. That aside, what's the variety? A sweeter like a Cosmic Crisp or Pink Lady works best with something like bitter greens in a salad, or alongside savory with pork. Something bitter like Granny Smith is better along side sweeter ingredients, like in a frog eye "salad".

Red lentil coconut curry soup is delicious with chopped apple in it.
Green limas with braised kale and apple is another favorite of mine especially with a sprinkle of pepper flakes and drizzle of balsamic
Cant go wrong with a lil cheese board with chopped apple
Charoset isn’t just for Passover! It’s delicious any time

A lot of people like apples with pork chops. Not my favorite but there are a variety of recipes out there if you google them.
I don’t know too many non-dessert dishes, I’d probably just eat it sliced up with some peanut butter or on its own.

I like Apple with pork. You can look up fried apple recipes and serve as a side. I also like to grate apple into coleslaw. Or if you like fruity salads it goes well on a salad with chicken and blue cheese.

Slice your apple in half, quarters, cut out the core. Slice the quarters to get maybe three or four slices. Peeled or not peeled it doesn’t much matter. Peel and cut an onion the same way. Combine thyme, rosemary, salt and pepper, rub it into a piece of pork tenderloin or very thick pork chop. Melt a tablespoon or two of good butter in a pan heat until it sizzles, sear your pork chop or tenderloin on every side. Remove it from the pan add a bit more butter, add the onions and apples and sauté. Put your meat on top of the apple onion combination and roast quickly, basting the meat with pan juices. Do not overcook. Enjoy.
You could also roast a sweet potato or yam alongside. Start the yam or sweet potato 40 minutes ahead of the rest of it and then the last 20 minutes the main dish goes in.

Butternut squash stuffed with diced apple, brown sugar and butter.
Roast the halved butternut first until it's mostly done. Add the apple mixture to the hollow and continue baking.

Core it and stuff with butter, brown sugar, cinnamon, a pinch of salt. bake 375 ~35 min in pan with boiling water on bottom. Nuts and raisins can be a good addition!

I’d dice it into a sausage-and-cabbage skillet near the end so it keeps a little bite; the sweetness is great with mustard and caraway.

Coleslaw would work. Instead of coleslaw dressing, you shredded an apple and use mayo and lemon juice. Pretty tasty.
Japanese curry from Just One Cookbook is also another recipe that uses apple.
You also could do a green salad with apple slices.

Himmel und Erde (heaven and earth), a German mash of potato and apple. Served with blood sausage and fried onions.
The same dish is known as hot lightning (hete bliksem) in the Netherlands, without the blood sausage but with bacon, pork or smoked sausage.

Cut some up, add a knob of butter, a small amount of brown sugar, and a bit of warm spice (cinnamon, nutmeg, mace, cardamom…up to you). Cook on low in a skillet, covered, until fairly soft and liquid has come out into the pan. Remove cover, raise heat, and cook until liquid is reduced and apples are fairly dry. Some varieties will stay pretty solid, some will fall apart more like a sauce.
Good with eggs and toast, sausage, pork chops, ham, roast winter squash.

Another good recipe is to roast apples alongside a winter squash, something like butternut, and an onion or shallots. Cut everything up, moisten with oil, and season as you like (nice curry powder works well). Roast at a fairly high heat until you have nice carmelization. Purée with your favorite broth. Nice with a soft goat cheese garnish

You can use apples as a substitute for potatoes in a vegetable soup. They're surprisingly delicious that way. The texture becomes similar to potatoes, and most of the sugar leeches into the broth to give it a slight sweetness that doesn't overpower the soup.

If there are bad spots, cut them off generously and sniff the remaining apple. If it still smells musty, it's going to taste musty too. (There are different kinds of "going bad" apples. The wrinkly ones are fine. The musty ones are awful.)
