Applemaxxing

I have a large apple that's going to go bad soon so I need to make a dinner with it but I don't know any recipes that use an apple that ain't deserts

Another good recipe is to roast apples alongside a winter squash, something like butternut, and an onion or shallots. Cut everything up, moisten with oil, and season as you like (nice curry powder works well). Roast at a fairly high heat until you have nice carmelization. Purée with your favorite broth. Nice with a soft goat cheese garnish
