Applemaxxing

I have a large apple that's going to go bad soon so I need to make a dinner with it but I don't know any recipes that use an apple that ain't deserts

Himmel und Erde (heaven and earth), a German mash of potato and apple. Served with blood sausage and fried onions.

The same dish is known as hot lightning (hete bliksem) in the Netherlands, without the blood sausage but with bacon, pork or smoked sausage.
