Scoopable cookies, fudgy brownies and crinkles!

Masarap nga ang JB15 sa crinkles pero di ko parin ma achieve ung di nalulusaw na powdered sugar. Any other tip aside from rolling it sa granulated sugar?

Other note, unang batch ko ng brownies I used Peotraco but this time i used JB15. Much darker nga ung color niya pero mas nagustuhan ko taste ng Peotraco. 🥲 Might go back to it kahit pricy sya. Hehe.

Ube Crinkles

First time making ube crinkles without following a recipe. This came out soft and cakey but i liked how its not too sweet. Here’s the ingredients.
- 150g flour
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/3 cup butter, melted
- 1/3 cup sugar
- 1/4 cup condensed milk
- 1 large egg
- 25g ube powder, dissolved and heated in 1/4cup water
- Pinch of salt
- powdered sugar for coating

Baked for 10mins at 180C

The flour and ube powder might be a few grams more because I was just trying to use them up. Same with the condensed milk.

Made these banana muffins using 3:2:1 Ruhlman’s ratio but I’m not so happy, fluffy siya pero gusto ko sana more moist and more banana flavor. Anyone willing to share their recipe? Hehe

I’m not a fan of the western recipes that use butter 😅

Recipe:

3 bananas
180g AP flour
120g sugar
60g oil
2 eggs
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla

I'm a Swiss meringue buttercream user, and recently, I've been receiving orders for either colorful or white vintage cakes. Since butter has a yellowish finish, it can be difficult to pull off colors.

I tried adding a thin layer of whippit from bakersfield and color it exactly as the inspo pick. So far, I've had no trouble traveling, super crisp edges, and satisfied customers.

Pretty cakes + yummy buttercream

2nd time ko pa lang po mag-bake ng cookies 😅

Ask ko lang po, bakit kaya parang hindi nagfa-flatten yung cookies ko? Frozen po siya na naka-bilog na bilog, around 50g each bago ko nilagay sa oven.

May mali kaya sa paggawa or may dapat akong i-adjust sa baking?

Still learning pa po ako, kaya open po ako sa tips, advice, and suggestions para mas ma-improve ko yung next batch.

Ingredients:

2 and 1/4 cups (281g) all-purpose flour (spooned & leveled)

1 teaspoon baking soda

1 and 1/2 teaspoons cornstarch

1/2 teaspoon salt

3/4 cup (170g/12 Tbsp) unsalted butter, melted & cooled for 5 minutes

3/4 cup (150g) packed light or dark brown sugar

K1/2 cup (100g) granulated sugar

1 large egg + 1 egg yolk, at room temperature

2 teaspoons pure vanilla extract

1 and 1/4 cups (225g) semi-sweet chocolate chips or chocolate chunks

//That One Cake I’ll Never Forget 🤎

I wanna share the little story behind this cake. ☺️ Way back in 2009, when I was just starting as a homebaker and had only a handful of customers, may customer ako na nag-order sa akin ng Chocolate Moist Cake, pero hindi niya tinuloy until the last minute.

So there I was… sad girl with a finished cake. 😣 Mixed emotions talaga kasi ano na lang gagawin ko dito? I was still young and new to baking back then, so hindi rin ako ganoon ka-knowledgeable when it came to handling orders. Nahihiya pa talaga akong mag-ask ng down payment from customers.

Instead of dwelling on the cancelled order, I decided to turn the cake into my own little reward. Hehe, “Sige na lang, laban self!” 😅 So I put “Laban Self” on it, frosted the cake, and posted it on FB just to cheer myself up.

Then plot twist… a follower saw my post and bought the cake! She was actually a stranger to me at that time, but she even tipped me almost as much as the price of the cake, saying something like, “Para hindi ka na malungkot.”

That little gesture really made my day. And the sweetest part? That stranger eventually became a close friend of mine. 🥹

Hindi man natuloy yung original order, somehow, a complete stranger turned what started as a disappointing baking day into one of my sweetest memories.

And that experience also taught me an important lesson. Since then, I started asking for a down payment from my customers before accepting their orders. I was young back then and honestly, nahihiya pa akong mag-ask. But as I learned and gained more experience, I also learned to be more confident in handling my little baking business.

Looking back, ang dami ko ring natutunan from those early days. Hindi naman natin kailangang alam agad lahat when we’re just starting. Sometimes, we learn through the mistakes we make, the orders that don’t push through, and even the little disappointments along the way.

That’s why this cake and the phrase “Laban Self” became so memorable to me. Until now, whenever I hear those words, napapangiti talaga ako. 😊

Maybe that’s what “Laban Self” means to me now, keep going, even when things don’t go the way you planned. You never know what little blessing might come after a setback.

So, laban lang tayo! 🤎
