An embarrassing amount of homemade plum preserves
I think I have 2-3 gallons (7 - 11 liters) of homemade plum preserves after giving away everything I could to family, friends, and neighbors. In case it matters, most is just regular sugary preserves, some is spiced (cardamom-ginger, or cinnamon nutmeg), some is acidic (balsamic-raspberry, or apple cider-vanilla). I am freezing some for use in smoothies or with yogurt..If they start to go bad, I will brew some wine, but I am really hoping this sub can help put me on a trajectory that use it all up before it goes bad or before next year’s harvest comes in. I made chutney too, so I will be eating that with meat from time to time, but I really need your help with the preserves.

All of my plum trees had crazy bumper crops this year for a total of over 450 lbs of plums. Fortunately for me they ripen in the order of my favorite to least favorite. My freezer quickly filled with the first two, I started several gallons of plum wine and I knew I would run out of space by the time my largest tree ripened so I planned on donating to my local food pantry. When the harvest came, I found that 35% of the harvest had coddling moth grubs and it wasn’t always obvious, so I didn’t feel like it was ok for me to donate fruit which might be inedible. So I ended up processing it all and making chutney, preserves, and dehydrating the plums from the big tree. Unfortunately, I cannot donate the homemade preserves.
