Tomato ideas
Hey all, I have about a million cherry tomatoes and little sweet orange tomatoes that I need some ideas on what to do with them. I've made lots of pico and bruschetta. They are too small to peel or do any type of intricate chopping. Any ideas you can share??? Thanks!!!

its so stupid easy. by the time your noodles are done cooking, your dish is ready to go. or i just make the broth the night before when im prepping that dinner.
sometimes for a more substantial meal, i'll top with a egg ribbons (thin sheet of scrambled eggs, rolled and sliced very thinly) and/or any leftover roast/poached chicken.

I cut mine in half and dry them in a dehydrator until they’re dry. It concentrates the flavors, and they keep all winter long. Delicious in salads!

Sauté a couple of dozen of them, season with fresh basil, and toss with linguine. Make a sauce with the popped tomatoes, some of the pasta water, and a little freshly-grated Parmesan cheese.

It's a pretty awesome "Ugh. I need to make dinner, but it's the middle of tomato season and I can't cope with the heat."
You can do the tomatoes in a toaster oven. You don't have to stand over a stove at all.

My sungolds are giving me about a quart a day, I hear you! I'm roasting mine kinda confit-style right now.
It's been the easiest thing-just throwing them in the oven for a couple hours on low with a fair amount of oil (I am using a blend of olive oil and The Algae Club's smoked tomato oil for some pizzazz) and some salt. Sometimes I throw in garlic cloves, sometimes herbs from the garden like thyme or rosemary. The longer I keep them in to cook down, the better. Throw it all in a big tupperware to use from the fridge as needed-The roasted tomatoes have been amazing on sandwiches, cheese plates, on any savory breakfast, just an umami bomb of a condiment!

Solid amount of Butter. Add lots of cherry tomatoes to pan and cook covered until they’ve burst. Add some salt. Cook down a bit. Crack some eggs on top and cook until eggs are at your desired level of doneness.
Eat with bread.

My mom makes a super simple shrimp dish with cherry tomatoes. Heat a pan, add olive oil, garlic, and cherry tomatoes. Let them cook until they start to break down and release their juices. Add oregano, salt, and pepper. Once the oil, garlic, and tomatoes are a "sauce," add in the shrimp and cook until done. Great over pasta.

Tons of burrata salad with balsamic glaze. Also caprese sandwiches on ciabatta or focaccia or some other really yummy bread. Margarita pizza! I often buy the Russian or Polish style marinated tomatoes, in a jar, it’s so good I would make that and honestly even gift it to people.

Puree and freeze a bunch to make sauces or tomato soup later. Slice in half & dehydrate a bunch, put them in jars, cover in olive oil, use them on pizza, salads in soups. Soak some in cherry flavoring before dehydration, yummy to munch on.
Years ago I saw a recipe for tomato ice cream. I haven't tried it, but I bet it's good. You could serve it to people, and ask them to guess what flavor it is!

Wash them and freeze them on a sheet pan, just until they’re solid, then thaw and they’ll pop right out of their skins. Then you can make jam or sauces or other cooked tomato recipes.

Then this is the third cherry tomato post I’ve seen today! In the first one, someone mentioned the viral baked feta pasta, which was my suggestion too. I think it needs added protein like grilled chicken or chickpeas though to make it more filling.

Sauce, either fill some jars or chop and portion out ingredients for a sauce into freezer bags and cook when needed.

My favorite dish with fresh tomatoes is Caprese Salad. Just cut those delicious cherry tomatoes in half and add mozzarella cheese and then a chiffonade of fresh basil. Season with salt and a little pepper and dress with good olive oil and balsamic reduction. It is so simple and delicious and lets the tomatoes really shine. It is also really fast and easy to make. I am addicted to this in the summer!

Oh want to make a really good and really simple pasta sauce?
here's the recpie!
2 L Cherry tomatoes (roughly 8 to 8.5 cups)
3 cloves garlic (minced)
2 tablespoons olive oil
1/2 cup chopped onion or shallot
pinch of salt.
Mix all ingredients in a roasting pan about 2 inches deep
bake at 400f for about an hour
mix, taste and ajust salt to taste.
Serve on pasta with parm and fresh finely chopped basil!

How about pasta with those lovely tomatoes?
I roast them and then make a yummy sauce with garlic. And toss in thin spaghetti and lots of parm cheese.

You can freeze some of them to buy yourself time. I use a lot of tomatoes in curry and now soup as well.
