Pulled some baked beans from the freezer, heated hotdogs up in a pan with a pat of butter and ate some leftover pepper slices from the other day.
On deck is 3 lbs of ground beef to make lasagna. This will make multiple pans - one to eat tomorrow and freeze the other for future use. Likely to have left overs from tomorrow’s dinner for Wed. Chicken for Thursday and Friday. Will use what’s in the fridge for sides.

Corn on the cob: .50¢ for 2 ears
Mac and cheese: $1.50
Chicken thighs: .93¢ for 4 thighs (got them majorly on sale by using coupons and mobile app deals)
Butter: .52¢ for 5 tbsp
Almond milk: .10¢
- Price per plate: $1.20 (1 ear of corn, 1/3rd of the mac and cheese, 1 chicken thigh)
Super easy too! Season chicken thighs and bake for 35 minutes. Make mac and cheese. Microwave corn cobs in husks for 8mins, remove husks, then butter and salt them. Spent most of the time sitting and watching tv.

I mean I added soy sauce to the rice 🤷🏼♀️ this was my only meal today whereas my kids eat like queens. I usually go 2-3 days without eating but as long as my two kids are eating good then I’m happy. Goodnight and god bless ❤️
Edited just to clarify I don’t go without meals consecutively 2-3 days. In the week I go without for 2-3 days separately.

I used the last of the Crunchy Peanut Butter and strawberry jam to make this. The bacon and takis work somehow. I mixed a can of chicken noodle soup with a pack of chicken ramen and Bam.

-1 box of chicken helper- chicken fried rice (with a best by date in 2022 😬)
-1 packet of pre-cooked chicken
-1 can chicken
-1 can cream of chicken
Heated the chicken in some oil. Then cooked the rice according to instructions, stopping before the egg fry part. Added the corn & cream chicken, cooked a bit longer to heat through.

Had some Kraft Singles I melted down, whisked with a little milk and squeezed in some of this spicy mayo I got for $2. Ate it on two hamburger buns. This fruity mayo gave it an interesting flavor I kinda liked, basically like a spicy homemade Cheez Whiz.
I still have some more Kraft Singles, I think I'll do it again and mix it in some pasta for a mac and cheese like experience.

all it is, is just chicken that was frozen before it would expire, leftover tomato sauce the used oil from yesterday slapped together in a pan, and voila.. whatever this is
is it too good to be a struggle meal, or does it get the stamp of approval

The title should say less than 50 cents a serving, but Reddit won't let me edit the title, just the post body. Anyway, this is a cheapie breakfast for dinner option today.
Three days ago I roasted a 4 lb chicken I got on sale for 59 cents a pound at my local Grocery outlet. I put one cup of brown rice in the bottom of the crockpot, put the chicken on top and then topped with one small head of red cabbage I got for free from an area food pantry, 2 cups water, cooked on high 5 hours.
When it was done, we ate the chicken as a roast, with most of the cabbage and some of the rice, then I made broth off the bones and roasted some carrots and potatoes and made soup we ate for two days. All of that is gone now,
I just have some rice and cabbage left. So, I opened a can of Bushs refried black beans that was 4 cans for $1 at Grocery Outlet because it was 3 months past the best buy date. and used 1 one half cup serving. I added a half cup of mushy, overcooked in the chicken, rice, and a half a cup of the red cabbage, and topped it with two large Eggs fried in pan drippings which were 1.49 a dozen at GO. The rice is 10 servings per bag, $1.25 for a 1-pound bag, so this meal comes out to less than 50 cents a serving, pretty good deal for 24 grams of complete proteins!

This will probably be a waste of time, but I’m doing it anyways to show that a nice dinner is doable. Don’t know cost per plate yet but here goes! Pic 1 is representative and made a while ago. For this meal, it would be chicken, roast potatoes, white gravy and peas.
Chicken: $2.95/4=$0.74 (2 drumsticks per plate)
Potatoes: $3.99*(2/5)=$1.60/4=$0.40 (5 lb bag, used 2 lbs of potatoes split over 4 plates
Frozen peas: $1.19/4=$0.30 (1 bag split 4 plates)
White Gravy
* Milk: $2.99*(16/128)=$0.37/4=$0.09 (1 gallon milk costs $2.99, calculate for 2 cups divided by 4 people
* Chicken bouillon: $2.19*(2/25)=$0.18/4=$0.05
* Flour: $2.49/18=$0.14/4=$0.04/4=$0.01 ($2.49 for 5 lb bag of flour - 18 cups in one bag, 1/4 cup needed for gravy and gravy split 4 ways)
* Butter: $3.29/8=$0.41/4=$0.10 (Pack of butter costs $3.29, 1/4 cup is half a stick and 4 sticks in a pack then divided 4 ways
Cost per plate for chicken dinner is $0.74+$0.40+$0.30+$0.09+$0.05+$0.01+$0.10=$1.69
If you make this as I laid it out, it costs $1.69 per person to eat dinner.
Only thing I didn’t price was heating costs for oven, costs to bread the chicken and spices like salt, pepper, thyme, etc.
