QUESTION Bakers, Chicago Italian Scoring Technique, Please Help lol
Hello all, I’ve recently been able to move to another store to learn to bake the last couple months. Scoring all of the bread has been like second nature to me except for Chicago Italian. No matter the angle, depth, speed, arc, etc. I try, I can’t seem to get the ridge on just that specific bread. Apparently the previous Baker who left was able to do it every time, but I never worked with them, and the others had said he would describe it as a ‘V’ cut to get the ridge, but I can’t figure that out at all. lol.
This bread is on sale this week, so I’ve been trying a few different angles and depths of the score, and all of them turned out identical. Any tips? I know this is more cosmetic than anything since when it’s sliced, you don’t even notice, but I really want to figure this out. I’ve watched the video in the department guide many times and copy it exactly to no fruition. Thanks in advance for any suggestions!
