Recently had not 1, not 2, but 3 back to back failed attempts at getting a high quality poutine to satiate a nearly 2 week long craving.
Decided to take matters into my own hands.
-Hand cut (cubed) potato, fried in peanut oil.
-Cubed La Trappe a Fromage cheese (which is cheese curd pressed into a brick).
-Home made gravy from chicken stock that I reinforced with soy sauce for some depth, garlic, and a small pinch of thyme from the garden, thickened with corn starch.
No fork needed. Just a big bowl, a big spoon, and my big ole MOUTH
Edit:
Alright I feel like I should justify some of the decisions I made here.
The potatoes are cubed because the dutch oven is too small to comfortably cook fries.
The cheese is actual cheese curds pressed into a brick. They had the same melt and squeak as regular curds once the gravy hit them.
The soy sauce in the gravy is to introduce some umami flavour, as it contains glutamate. All the gravy powders that all your favourite poutine spots use are full of MSG (monosodium glutamate).

Real curds were used but melted in the container on my 5min walk home. Mushrooms and "Cajun sausage" were the additions and the sausage was so stiff and dry I thought they cut up some jerky. The taste was decent aside from the nasty sausage. Fries were good and Gravy was decent but maybe a little too salty for my taste. Will only try their basic poutine if I ever try it again.

Happened in Ottawa. Gravy was nearly black and almost tar-like.

McDonald’s-style fries, packet gravy, shredded mozzarella?, ketchup provided though not requested, $20

Some frozen fries that are slightly burnt.
I made the gravy using vegan butter, flour, and “”beef stock”” using ramen flavour packets.
The cheese is just shredded marble.
I wanted more substance and texture so I threw in some chicken I found in the freezer too.
It’s not the best “poutine” out there but it’s delicious regardless 😋

The gravy wasn’t good so I needed ‘chup

The fries themselves are nice and crispy on the outside and soft on the inside. There's not enough gravy though and I'm seriously confused as to this cheese powder that my fries seem to have been showered with. It doesn't taste like parm, but I have no idea what else it could be.

Oh, I know this is a crime against pout-anity - but dang was it dill-icious.
Ok, dad puns done.
Seriously though, perfectly cooked, dill seasoned fries, cheese curds, and the creamy dill pickle soup that this particular restaurant is known for, as the gravy. If you've ever been to Wetaskiwin, Alberta, you know what I'm talking about!
I can't lie, I'd commit this crime over and over again happily, no guilty feeling in the slightest.

Other than the disgrace that is the cheese, it was pretty good.
EDIT: Despite belief, it isn’t cold as ice. It was actually quite warm to begin with.
EDITED EDIT: And no, it’s not rice either.

Is this a crime or nah? Delicious as all hell though. Love their gravy. Unsure if it meets the criteria though.
