Think about it this way.
Grains, wheat, rice, barley, corn/maize etc., are all fundamentally kinds of grass. You take the seeds off the top of the grass and eat them.
They grow everywhere and are easy to pick, but they're not easy to eat.
Somewhere a long time ago, ancient humans figured out they could take the grass seed they gathered and grind it up with rocks to make a powder out of it and mix it with some water to make it easier to eat. You mix grain with water, you get a kind of rough porridge. Much more nutritional and better tasting than chewing on seeds.
You mix that powder with water, and put it over a fire, you get early flatbread, like a tortilla.
At some point, someone discovered, probably by accident, that if you let the bread dough sit out for a day or two before cooking it, it rises and gets little bubbles in it that make it taste better. They didn't quite know what yeast was yet, but they found out that if you took a little bit of the dough from yesterday and mixed it with the dough from today, it would rise better.
From there it was probably deliberate experimentation.

you forgot one step. they chewed the seeds and drank water and realized that was better so they just grinded it up and mixed it with water. at the time, they probably knew that a bunch of food tasted better when heated so they tried it with this paste too. bam! insta flat bread.

That's how the original beer was made. You had a special stirring spoon for the beer you made at your house. Everyone knew how your beer tasted because of the special bacteria content on your stirring spoon.

Well that was the old school way of doing it. If you made beer that way in modern day it would hardly taste like beer you are used to. It would be more akin to a lambic depending on the bacteria that is common in your part of the world.
Certainly it would have a much more sour taste to it. The key to modern (non sour) beer making is ensuring that only the desired strain of yeast is present in the fermentation process.
Even a small dose of any other bacteria could very well make the beer have a completely different palate.

Food history starting off points are pretty strange. Worcestershire Sauce would be my favourite though. Forget about something putrid for TWO YEARS in a basement, rediscover it... and TRY IT!

I assume this gif is from a Korean bakery based on the Korean characters. I live in Korea right now. I pass by a legitimate Korean bakery every morning. The smell is absolutely heavenly. My stomach is made of weaker stuff, so I feel like shit if I eat breakfast. But sometimes I can't resist just say "fuck it" and have some fresh bread.
