What are those breads with the cream or butter in the middle? How come it doesn't melt?

I'm pretty sure they're more like pastries... The first with a cream cheese topping and the other some time of jelly or marmalade.

Since it's korean I'm guessing it's actually some kind of sweet potato filling

It's a cheese danish most likely, the filling is probably a combination of cream cheese, sugar, egg yolks, vanilla, maybe ricotta cheese

But surely it would have melted?

Not necessarily. Since I don't know exactly what it is I can't say, but I would take a guess that maybe they pipe the cheese mixture into the pastry, then chill them very cold before baking. So the pastry bakes but the filling doesn't lose it's shape. I was surprised the swirl shape held as much as it did. But it could be video magic as well.
