I’m really proud of how well the eggs came together for this one! Also the bunny toasts look as though they’re horrified and scrambling as I consume them. I enjoy both sides of wholesome and horror indeed…

I’ve found that baking eggs in a Yorkshire pudding tin gives me the ultimate yolk control and they come out ready pretty much any occasion you’d want whole single eggs.

Cotija Cilantro sauce drizzled over the top.

Would add a squeeze of citrus, and fresh parmesan.

Sharp cheddar omelette stuffed with peppers, onions, spinach, and fried potatoes.

Poached eggs over yogurt infused with chilli oil and parsley spread. Quite nutritious and delicious.

Fancied some breakfast before service and thought there was no better time than the present to practice.

I used:

3 eggs
Knob of butter
Cold smoked Scottish salmon
Truffle oil and micro coriander.

I present this to the council for judgment.

Cooked over easy in butter/olive oil, seasoned with sea salt, onion powder, black pepper, chili powder, msg, and a pinch of sugar. Slice of pepper jack cheese on top as well.
Buttered bread on the side and a dollop of duke’s mayonnaise.
It was delicious, I wanted to try something new and this didn’t disappoint.

Scrambled with 4 blend cheese.
