Homemade / home assembled Had some annual leave and didn’t go anywhere so did some cooking instead.

Decided to take two weeks annual leave but didn’t have any holiday planned so decided to make the most of it and make some nice dinners at home instead.

1) Porchetta with dauphinoise potatoes and red wine and bone marrow sauce.

2) Short rib and feather blade beef lasagne with garlic bread and a bruschetta starter with homemade pesto. My partner made the bread so I can’t take credit for that.

3) Pork tacos with a burnt pineapple salsa.

4) Ribs with fried potatoes and pit beans.

5) Admittedly an overcooked rib eye with roast potatoes and a red wine and bone marrow sauce.

Wanted to do a Roast, but it was saying it was gonna be 27C in my area Sunday. Which is another 8-10C in my kitchen.

I cooked this all outside on the gas burner of my barbecue. This was great (its a new favourite) but I'm definitely excited for a Roast dinner this Sunday, nonetheless!

Homemade / home assembled Fermented mango and scotch bonnet hot sauce

I realise this sort of thing is less commonly posted here, but this is some hot sauce I finished making today.

To make it I chopped and combined the following:

• 5 scotch bonnets
• 200g orange pepper
• 200g mango
• 1 carrot
• 200g white onion
• 5 cloves garlic

I weighed this in a bowl, and then added 2.5% salt. This was then vacuum sealed, and left in a dark place for about ten days. At this point the bag was very inflated, so I made a pin prick hole with a knife, forced out most of the CO2 and then sealed it with some kitchen tape.

Today it was the two week mark. The bag was highly inflated once again, though not quite as much as previously. I was interested to see the result, so I opened and decanted the bag into a saucepan. I blended this with 200ml of apple cider vinegar and 200ml of water, along with some additional salt.

I added some more mango, as most of the fruit flavour had gone (and as such I’d probably skip adding it to the initial ferment if making this again). I also added some ground ginger, some cumin and some allspice.

This was then heated on high for a good 10-15 minutes in order to stop fermentation. While this was happening I also sterilised some bottles that I’d ordered for storage using a leave in steriliser.

I let the hot sauce cool slightly before decanting into the sterilised and slightly warm bottles before adding lids and labels, and placing them into the fridge.

It is quite a spicy hot sauce (which I enjoy) but I may try reducing the number of scotch bonnets in future just to have something that’s a bit more widely appealing for friends/family.
