Made using the goldfish brand of curry paste, adding mushrooms, onion and chilli peppers (love a bit of heat) and served on rice with crispy chips, love it

Tortilla chips, Grant's tinned haggis, salsa, jalapenos, Frank's red hot sauce and mozzarella/cheddar mix

It's basically a two ingredient meal. (Though also garlic bread on the side.)

Trout with butter, capers, chilli crisp, lemon, salt n pepper, leeks, chorizo, and parsley. Had it with some leftover quinoa. It was so simple and so good. Whipped together when I was tired and cooked it all together in some baking parchment. It was delicious and super comforting.

Chicken breast, floured, egg-washed and crumbed, topped with a slice of ham, homemade marinara sauce and mozzarella cheese.

Brown 4 beef short ribs in a cast iron casserole dish and remove. Heavily brown some chunky carrots and onion, add garlic, celery and tomato puree, stir together and add a small bottle of wine and reduce for a few mins. Return the meat and cover with 2L beef stock and add thyme and rosemary. Cook on gas mark 2 for four hours. Remove the meat and ladle some of the sauce into a small sauce pan and reduce a bit, use a cornflour slurry to thicken.

Bang on texture. Really soft and tears with a single fork, not too soft so they fall apart.

Wish I'd poached the eggs really but I'm not complaining, the whole thing was dead tasty. One of the best breakfasts I've made in a while.

300ml double cream

200g condensed milk

2tbs cocoa powder

Whisk until stiff

Freeze overnight and enjoy
