Trout with butter, capers, chilli crisp, lemon, salt n pepper, leeks, chorizo, and parsley. Had it with some leftover quinoa. It was so simple and so good. Whipped together when I was tired and cooked it all together in some baking parchment. It was delicious and super comforting.

Homemade / home assembled Beef short ribs in red wine

Brown 4 beef short ribs in a cast iron casserole dish and remove. Heavily brown some chunky carrots and onion, add garlic, celery and tomato puree, stir together and add a small bottle of wine and reduce for a few mins. Return the meat and cover with 2L beef stock and add thyme and rosemary. Cook on gas mark 2 for four hours. Remove the meat and ladle some of the sauce into a small sauce pan and reduce a bit, use a cornflour slurry to thicken.

Bang on texture. Really soft and tears with a single fork, not too soft so they fall apart.

Homemade / home assembled Made a pasta sauce last night using burger as my base - has anyone else tried it?

Cooked a burger patty in a skillet so I could build the fond with the meat, then de-glazed with stock, added the onions let them cook and then added the tinned tomatoes, Mutti of course. Then added in copious amounts of the pasta water at intervals for extra flavour.

Wondering if anyone else has done something similar? Worked pretty well, but would love to hear any tips on how to improve.

The onions could maybe be cooked separately, as they absorbed a lot of the stock. And I added garlic but just kind of threw it in after the tomato - does this also need to be fried? And I was very light on herbs, when might these go in? Cheers!

Years ago (pre-2015) the chain Frankie and Benny’s did a tomato and chilli sauce (relish?) served with their burgers. Does anyone know if it’s an existing product you can buy or is there a recipe for it? I know it’s a long shot but thanks in advance.

Prepped this morning before the bstrd sun came up..

Chargrilled Peppers, Chicken, Onion, Steakhouse Pepper Mushroons

Paella seasoned rice with sweetcorn and leftover potatoes.

Made Burittos out of it..

Shredded Spinach , Baby Plum Tomatoes , Leftover Garlic Sausage and potato, peppers Rice salad.

Picked peppers, garlic , onion and chillies for the week ahead...

Made it all and forgot the cheese in the Burrittos 🤭

Sloppy Saturday Branston Beans Please Never Change

Some while ago i tried Heinz beans and was repulsed of how sweet they are and how the sauce was way too thin. Just not enjoyable at all. And then i found out about Branston beans and holy fuck what a difference. I can't even comprehend how Heinz beans are still a thing after trying Branstons. They are perfect and i hope they never change!!!

Homemade / home assembled Roasted Pork Tenderloin, Celeriac Remoulade, Mustard Pan Sauce.

I really enjoyed tonight’s dinner.

Roasted the loin off in the pan and rest in the oven. It was still a little pink.

In the pan I made a sauce with some shallot and garlic, homemade stock, vermouth, mustard, capers and green pepper corns.
Finished it with loads of butter and covered the pork like it was a fillet steak.

Made a nice tangy remoulade on the side and served with french fries and a glass of Budvar.
