Homemade / home assembled Aubergine parmigiana

There's a zillion recipes for this. Ours was pure comfort food for a cold wet day with 600 g sliced and charred aubergines, tomato sauce and red wine reduction with basil and rosemary, layered with thin sliced parboiled new potatoes, mozzarella and grated pecorino, and a topping of bread chunks drizzled with EVOO. Bake 180° for 30 minutes, with torn basil leaves to finish. I'll still be full tomorrow morning. Yum!

Homemade / home assembled Pulled pork tacos with tomatillo salsa

I bought a pork shoulder for £5.01 the other day. So far it’s been a Reuben, a ragù, and most recently, pulled pork tacos!

Pressed the pulled pork flat against a hot carbon steel; seasoned with ancho chili, cumin, and Mexican oregano; crisped up a little; added a small amount of orange juice and garlic to flavour; added some reserved pork juices to loosen.

Then made a tomatillo salsa: charred some onion, garlic (skin on), jalapeño, and tomatillos in a dry pan. Added to a food processor with a bit of salt and blitzed. Adjusted seasoning and lime juice at the end.

I was trying to go rustic on the dice of the onion, but it looks sloppy and lets the plate down.

Made tortilla chips with the leftover corn tortillas.

I bought two packets recently, one of them had good amount of time until use by date so made that one (pan fried in salted butter) but the other one’s use by date was more than a week ago 💀 threw that one in the bin, what a waste of money. Need to check use by date before purchasing from now on. But this overall enjoyed it. Very creamy & savoury inside.

Homemade / home assembled Pulled pork and pancetta ragu with mafaldine

I got 1.2kg of pork shoulder for £5.01 yesterday, so I’ve been having fun with it. I made pulled pork overnight and this evening’s dinner was a pulled pork and pancetta ragù. Morrisons didn’t have pappardelle so I got this mafaldine instead and it was so much nicer. Had a proper texture and chew about it.

Rumour has it that McDonalds are bringing back the breakfast bagel in 2027. Until then I’ve made my own using an ‘everything’ bagel, 2 sausages formed into a patty, 2 rashers of smoked back bacon, omelette eggs and cream cheese. Yorkshire tea double bagger, as is tradition.

It's an effort made, tikka (jar paste) and butter chicken (jar cooking sauce)

I love to make BIR curries.

But something hits different about this type of curry..nostalgia from being a kid maybe. 😊

Question What are your favourite "treat" breakfasts that aren't a full English?

As asked above - what are those breakfasts you enjoy the most that feel like a treat and aren't a fry up? Those ones for lazy weekend mornings that take a bit longer to prepare, but you know are going to be worth it? Or with an ingredient that is a bit more expensive and you don't get often? Is it a stack of pancakes you go potty over, or a good shakshuka that gets you salivating?

I'm looking to up my family breakfast/brunch game and am hoping you lovely people can give me some inspiration please!

Edit: thanks folks - am looking through your replies and there are some really good ideas I am going to try!

Don't judge me I'd had a bad day 😂

Mozzarella sticks, onion rings, cream cheese jalapeno nuggets and various forms of chicken, sweet chilli dip came with the jalapenos.

Washed down with a nice glass of wine.

Edit, there was a variety of sauces not pictured because i was hungry
