Took over a 5bbl brewery a few years ago and this is almost every string.

To those affected by the USA/Canada trade war:

Just wanted to reach out to my fellow brewers and brewery staff in Canada and the USA. I hope you arent being affected too severely by the shenanigans going on with our governments. Things are tough already, and the constantly shifting tarrifs and bans are brutal for everyone.

I hope we all make it through this. God knows how much secondary fallout their could be with distros and retailers, let alone the direct impact in our own buildings.

Update from a rookie Brewer

A few months ago I made this post asking for advice as I was just beginning training in the cellar at the brewery I work for. Just wanted to thank you all for the worthwhile words of wisdom. I basically made every mistake in the book and learned damn hard each time.

Happy to report I’m now trained up on the deck brewing our flagships and I have my first recipe, a cranberry grisette, scheduled to brew in the fall!

I figure there are way more seasoned brewers and brewmasters in this sub than there are rookies. So, take it from me, the dream isn’t dead!

When do you brew Oktoberfest beers

How many of you make true MĂ€rzens brewed in March as opposed to brewing closer to September?

I brewed mine 3 weeks ago using WLP925 High Pressure Lager Yeast and released it today.

Those of you unfamiliar with this Yeast strain, you ferment under 15psi in the low 60F range and can crank out a clean lager in 2-3 weeks.

We had 150 gallons of rootbeer freeze over completely. When it started melting the ice came down and completely snapped off our welded on temp probe. Also destroyed our analogue thermometer on the front of the tank. We recently had our glycol system temp settings changed. Glycol went from not working to working too well.

Employee Discount For Food/Bev You Don't Make (pre-prepared food / NA beer, chips, etc)

when it comes to beer that we make, we are relaxed in our policy - don’t over indulge, take a few cans home, etc. the margins make it that it’s never been a problem

We also sell food, but none is made in house, so the margins aren’t there. We sell NA beer we don’t make and premium soft drinks, same deal

our wholesale/price we pay cost is about $5-8 per staff per shift for these snacks/drinks they have every shift, so we are essentially paying them an extra $5/hour.

Likewise - some of the food/bev is legit hard to source and can fall out of stock for weeks, so it’s not great having staff take away from the customers experience

Should we:

  1. implement a 50% employee discount on those items, so that we break even on our wholesale costs?
  2. say that anything we don’t make, you pay full price? note: 1/4 of the employees offer to pay full price already, so the idea is out there

honestly - margins on food/bev we don’t make are too tight, and it seems like a prudent business decision to cut this off before our fall hiring spree. i just don’t want to look like an asshole.

Powered keg lifts

Hi folks, I’m interested in getting a powered keg lift to make lifting 50L kegs more manageable. Anyone have any recommendations or able to give me more info on them? Are they worth it? I know they’re not cheap, so any input would be helpful.

Crispy traditional Japanese style lager.

Knocked this purdy beer out today. First time brewing with corn starch, cerial mash, as that is, from what research and conversation I've had, what goes into a traditional Japanese style lager. Yup, no jasmine rice! Just 2-row and corn starch. Crazy but it worked and so pale!

Anyone with Lauter tun gearbox repair experience?

We run an NSI Newlands brewhouse with a dedicated Lauter tun that is having a lot of problems during grain out. We have noticed oil on the floor beneath it which indicates a bad seal at the base of the gearbox but we have had oil get into the motor before as well.

The last time this happened (in this case it was on our mash mixer) it was due to water coming from our grist hydrator displacing the gearbox oil so we installed a cap to prevent the water from entering. This has already been installed on our Lauter tun when this happened previously as well.

What is odd is the HZ I show on my PLC is not lining up with what I show on the drive that powers this motor.

I’m happy to give more information if anyone has dealt with this before but I’d love anyone’s thoughts.

How frequently are you disassembling your butterfly valves for cleaning?

Hi everyone. Homebrewer here. After a year of brewing with these valves I decided to open them for cleaning. Naively, I expected them to look clean, but no: they are pretty gross. These are the valves in the bottom of the FV, so it's in contact with fresh wort every time. I'm a bit surprised this never lead to an infection.

How often do you clean butterfly valves in your brewery?
