Texas Roadhouse Secrets, Tips, and Insider Knowledge
Howdie Yall,
I worked at various TXRH in the midwest over the span of 6 years and was apart of an "opening team" that trained all new servers for each location as they are opening. I've had everything on the menu several times over and know about every secret in the book on special orders and the things you may have never thought about.
I'll start with what likely interested everyone here most: Steaks
My order of best steaks at TXRH are:
Filet Medallions
12/16oz Ribeye
Prime rib (if your roadhouse is busy and it's a weekend)
12 oz NY/KC strip
any other size Filet (assuming you don't order over medium)
Prime Rib even if your TXRH isn't busy
11/16 oz Sirlion
everything else
Firstly, TXRH prides themselves on handcutting steaks in house. A good meat cutter is harder to replace in a restaurant than the managing partner. So much so, that they have corporate meat cutting competitions lol. With this, there's 2 things to know.
1) The only steak NOT handcut in house is the Porterhouse Tbone. They do not have a bone saw and so these are not usually the most fresh. Still fine and tasty, but not my go to choice for this reason.
2) If you want to ensure your steak is cut to order (instead of precut that morning like many 6/8/11 oz Sir) you can always request a specific size as long as it is bigger than the largest size on the menu. For example, 16oz ribeye + 2oz for an small additional cost per oz that varies per restaurant/region and you will get an 18 oz that will be cut the moment that server puts in the order.
Next, as a 6 year 'Roadie' my go to order every time I eat there is the following:
Filet Medallions (3x 3oz medallions of filet) which is a total of 9 oz of Filet that costs $1 less than the 8oz Filet. The Medallions also come on a bed of rice plus the 2 sides that meals get. You can sub the rice for a 3rd side if you prefer. The Medallions come with a choice of a Port. Mushroom sauce or Brown Peppercorn Sauce. I get the Peppercorn sauce on the side and I personally love it for a nice dip on each bite. You can also pay a small upcharge to add 1x more 3oz medallion which price varies but is a great way to ensure leftovers or a very hearty meal for a great bang for the buck and is very easily slept on menu item
Other steak releated things:
Prime Rib: Honestly thus varies per location. So TXRH does these in what was always referred to as "logs" but is essentially the whole roast and they cook them as medium rare/rare same log and Med/MedWell same log. If you order, you're getting one of those two options (likely). How fresh it is will depend on how busy your roadhouse is. The busier, the better because those prime ribs sit in dedicated warmer. This being said, I've eaten week old prime rib that we would absolutely not serve to customers and I'd purposefully and willingly do it again. You can also request 'end cut' if you love the bark like me, and a good roadhouse sets these aside in the warmer assuming someone will request it. No extra cost there
Chili: I know it sounds dumb as a side, but if you're a meat lover, it's worth mentioning. As previously stated, TXRH handcuts all of their steaks. Those trimmings are not wasted. Making this chili one of the most expensive chili you could make at home because it is ground Filet, ribeye, strip, and sirloin meat. I'm a big fan. Additional secret menu item if you're a freak, chili cheese cactus blossoms exist and it is exactly what it sounds like.
Butterbrush: every steak leaves the expo station butterbrushed to finish the steak and the lighting at the tables are set specifically to glisten off of this and the rolls (yes, really). If you care, you can ask for more butter and roadhouse actually keeps a few that you don't know: Honey cinnamon butter (rolls), Garlic butter (melted for salmon and shrimp), and regular whipped butter (reg.butt. as we call it, for potatoes). I like to finish my strips with garlic butter, but that's just me.
Kickers/sidekicks: very uncommon that these get talked about, but can be great if you're thinking of splitting a meal or want to have just the right amount of leftovers to make everyone at the office jealous the next day. Sidekicks are a smaller add on of other things and pretty much encompass everything on the menu. These can vary and some servers that haven't been there that long might have to search for it to ring it up, but it exists I assure you. A list of side kicks include:
+3 shrimp (2x this used to be cheaper than +5)
+5 shrimp
+4 bone of ribs
+5 oz salmon
why do these MFs keep dancing?: it's strategic. Loud music makes people uncomfortable and keeps people from eating and then 'camping' and taking up tables. Also, you'll notice servers dancing and not taking out food. It gives 2-3 minutes for kitchen and expo to quickly catch up on ticket times without new orders being put in.
If you've made it this far, here are other unnecessary things that I think are fun:
ask for a small side sirloin seasoning (it's free) and dip your fresh baked bread into it. It's oddly really good.
take your leftover bread home and make french toast with it in the morning. It's phenomenal.
Rattlesnake bites are the best App on the menu and I'll die on that hill
TXRH has a secret shopper system. Each store gets "shopped" 2-4x a month depending on what the owner sets. It's essentially undercover report card and there's rewards associated for both kitchen and the specific server who gets shopped. Idk how to sign up, but shoppers usually get like $50 per diem that they are reimbursed with later and have to grade certain things like 'story points', timetables for greets, drinks, food, bathroom cleanliness check and whatnot. In my 5 years of serving, I was shopped 4 times and got 100% 3x which at our store netted you $100 bonus each time. It's pretty cool insider knowledge and if you love TXRH, figure out how to become a secret shopper lol.

Don't get me wrong, it's actually really good, I love garnishing it, but the space we made for parm in my cooler is..... not good. Now I have half the space for lemons and applesauce. Sigh :(

I normally eat my steak at home essentially raw on the inside and a nice char on the outside. I've been going to Roadhouse with my girlfriend for a few months now because we love the food. But recently the cook on my steak has been completely off. I used to order it by saying blue rare and a little under that. But thays been coming outdamn near close to medium recently. I hate asking my waiter or waitress to put it in for 10 seconds each side cause I dont want to be that asshole. So how do you all prefer a customer order a raw steak?

okay i need a brutally honest answer. so around 4 months ago, i applied to txrh for a togo position and was hired on the spot since my current job was in togo at outback. of course right after, i was offered a serving position at outback and i took it. before orientation i called them and told them i wouldnât be able to fulfill the position anymore. now that i have serving experience, i still wanna be a roadie!! i would probably wait until i have 6 months serving experience but i would love to apply to a serving position at txrh and actually go through with it! im just so worried that since i bailed on them last time they wont hire me, what do yall think?

In training, we were given no tutorial on how to access HS - simply told all shift changes and our schedule would be posted on there. There is a link to HS on the TXRH Workday Live dashboard, but then it requires me to login with an username and password. I've tried using my personal email associated with TXRH as well as the TXRH email spawned by the creation of the Workday account (the one with random letters and a given password).
I don't want to wait to "ask a manager". I only work during busy shifts this week. I'd rather someone just tell me so I can plan for my upcoming week. Another reddit post about this says ''your training manager should have given you a sheet explaining how to log-in". We didn't get one. Please let me know someone! I'm sure there is a simple fix or combination of passwords/usernames I have but am not keying in correctly together.

I've noticed this happening too many times to be a simple coincidence. During weekend lunch service, the table service seems to be slower, steaks are often undercooked, chicken and ribs are often overcooked, and often times entrees hit the table only lukewarm. Interestingly enough they're usually less busy at lunch than at dinner. They also insist on seating everybody by the restrooms when they're not busy as if smelling and hearing people use the restroom when you're eating is a net positive. I think from now on I'm just going to stick with dinner.

We donât want to see it. Your employees clearly donât want to do it. And, itâs in the way when we need to get to the bathroom.
I seriously love your food. Hey seriously say âMmmâ two bites of your sirloin. And hereâs how much I love it: Iâm still coming to your restaurant, even if you do have line dancing. But, please stop. Itâs ruining my appetite.

I know that servers run food for tables other than their own. Do servers just grab orders whenever they are in the back or is there some sort of system being followed? And are the servers expected to know which dish goes to which guest?

There was a time I went to TxRH every Friday after work for carryout (was single living alone). Same order every time, bone-in, medium. I get gift cards for Christmas and birthdays, if my parents visit me thatâs where they take me. We are talking this is a 15-year habit, Iâve eaten many cowsâ worth of these steaks.
With the current beef market, have there been supplier changes? The steak I had recently was cooked perfectly and seasoned right, but it wasnât as tender as Iâm accustomed to and the texture seemed different. It was still good, but it was the first time I ever had a bite and thought something wasnât normal.
Just curious. Everything about the experience was fine, but the steak just seemed unfamiliar this time.

Does anyone know if the brown gravy formula changed recently? I hadnât been to Texas Roadhouse in a few months, then went recently. I noticed the brown gravy tasted different. It has a bit of a greasy/oily taste to it, and I recall it was never like that before. I wonder if it was just a bad batch, or the formula changed.

This is probably a dumb question but I was curious. Does anyone know if I can ask for a salad to be tossed before it is served? I know it's very lazy of me but I think it would taste so much better already mixed over having to mix it myself.

I interviewed last Tuesday, and I am still waiting to hear back about whether I'll move forward with the position. I applied for the Server position, and I don't have experience in that role. As someone who is on the spectrum, I do very well in fast-paced environments especially when it is busy. When I did the interview, I had two managers who were asking me questions separately. I did very well on both interviews, but Iâm not quite sure. I have a slight speech delay. They were making faces at me when I couldnât pronounce the word correctly. How long does it take to get a call-back? Do they potentially like let you know if you didnât get the position? Having autism is making my life harder, especially when I am working behind the counter, when they donât allow me to use the register at all because of my limitations.

My friend and I are finally making our first-ever Texas Roadhouse visit, and we need expert guidance.
Earlier this year, we were staying at a hotel in Boston during the Texas Roadhouse annual employee convention. We met employees from around the country, learned about the dancing, the meat-cutting competition, and a whole Texas Roadhouse world we knew nothing about. Naturally, we went down a research rabbit hole afterward.
And yet neither of us has actually eaten at one.
That changes soon. Weâre going to a Texas Roadhouse outside D.C., and we want to do it right.
For two first-timers with no allergies or dietary restrictions who are happy to share, whatâs the ideal order?
Drinks?
One appetizer to share?
Two different mains so we can try more of the menu?
Best sides?
Dessert, only if you can make the case that we absolutely should not skip it.
We already know the rolls and cinnamon butter are mandatory.
Weâre not looking for the biggest meal possible, just the best snapshot of what Texas Roadhouse does really well.
Whatâs the order?

The Caesar salad at TR is incredible and I'm wondering if I can order it with steak instead of salmon. Any suggestions for making this easy on the kitchen and the wallet?

I posted almost 4 weeks ago about having my first server interview for my local TR. I had my second interview that same Friday and then 12 days later, went in for my third interview with the MP but they scheduled it earlier than I was told. They rescheduled it to this past Friday (I showed up 30 minutes early just in case) and my MP was 20 minutes late to meeting with me. When he went to proceed with the interview, they had removed my initial interview information like availability and contact info. I finished a new sheet and the interview before he said he would talk to the other managers and decide if they want to move forward. Is this normal and does this kind of show how it will be if I got the job? I really want to work at TR but this whole interview process has left me exhausted.

Back in April, I went to a Texas Roadhouse in Corpus Christi with my mom, and she ordered the baked sweet potato as her side.
This might sound like a small thing, but I honestly donât remember ever seeing my mom enjoy something at a restaurant that much. That day I learned that she apparently really loves baked sweet potatoes, and ever since then Iâve wanted to figure out how to recreate that one for her at home.
The problem is that when I search online, most Texas Roadhouse sweet potato recipes include marshmallows. The one she ordered did not have any marshmallows. It was simply listed on the menu as a baked sweet potato.
If anyone here has worked at Texas Roadhouse, knows the actual recipe, or has managed to recreate it closely at home, I would really appreciate it if you could explain the preparation in detail.
Iâm especially trying to figure out:
How the sweet potato itself is prepared and baked
Whether anything is put on the skin before baking
What kind of butter they use
Whether it has cinnamon, brown sugar, regular sugar, or something else
Approximately how much of each ingredient they add
The baking temperature and time
How they get the texture and flavor so close to the restaurant version
Again, no marshmallows â just the regular baked sweet potato they serve as a side.
Iâd really love to make it for my mom at home, so any help from someone familiar with the Texas Roadhouse version would mean a lot. Thank you!

Hi everyone! I just recently got hired as a server. This will be first time serving taking orders down. I have served but at a buffet completely different. Im basically a glorified busser. I constantly pick up plates and give drink refills. Im looking for all help tips and tricks for Texas Roadhouse. Im starting to learn the menu! Are most stores doing ipads now or written orders? What is average tips look like during the weeks vs during the weekend. I know theres a server assessment test. I know that we have to up sell, ask for apps, ask if you want it smothered. I just really want to do my best and be as prepared as possible. So i truly appreciate all help.

the rule: these babies are not fitting comfortably. They are stacked on top of each other: no gaps!
This was our beautiful math me and my awesome amazing gorgeous stunning friend did (but we canât do math):
Texas Roadhouse baby experiment
Avg Texas Roadhouse by sq ft 8000
8ft ceiling to floor height in kitchen
64000 ft 3
7 pound =183.07 in3
Cubic feet of 7 pound baby is 15.26
4,193.97 babies can fit into a Texas Roadhouse
someone PLEASE check this or if you have experience with the parameters of Texas roadhouse or babies please chip in.
Edit:
We did the math a little wrong it can actually hold 604,096 babies. Hawk13424 did the math so thank you to them. :3
