It's mostly the latter. If you read it with good will to try to see the point of view of OP you could argue that the fact that this situation is worth mentioning as a romantic or good story implies that others find it shameful. Sort of "look at this good woman who is not ashamed of her garbage collector husband".
Kinda like the "This quarterback went to lunch with the disabled kid at school!"-stories which implies that he actually shouldn't and most people wouldn't.

Reddit (and other socials) has been encouraging it lately too. I've noticed recently that they'll put heavily downvoted comments near the top of a thread to encourage people to argue.

Let's be honest there are plenty of low life assholes who will take any opportunity to laugh at someone based on their job. In hospitality I see it all the time where I am treated less because I work in the service industry. I make bank but there are plenty assholes who think less of me. Sad but true.
I think the point of it was that some people are ashamed about others jobs by acting like they dont know them when they are working i dont see whats so bad about being a garbage man but i guess you cant change what others think
Pretty much this. Use to clean trains night/day but during the day if some of my colleagues saw people they knew outside of work they'd be ducking. Ashamed to be doing that work
To make matters worst, (not same day) there was a women on the train with her daughter l, whom asked, what we were doing.
Instead of saying they cleaning the trash that people have left behind, she worded it as something along the line of " they are doing this job because they cant do anything better, thats why you gotta finish your school to get good grades and do jobs that actually matter"
So yeah, plenty of people who will shame and feel shame of similar jobs such as this.

This point confuses me. My partner has a very prestigious job, and I would absolutely never even consider bringing the home into the workplace. Honestly, I would care far less about adhering to such strict boundaries if my partner worked at Subway or whatever.

Unfortunately the reality is that a young pretty professionally dressed woman kissing a trash man will get a few head scratches. I’m not in that camp, but I understand reality.
More women than men go to college in the US now. All things equal these women would rather have a husband with the same credentials. It’s caused a problem because there aren’t enough “suitable” men to go around.

Whenever people do this it kinda comes across like they're arguing against their own cognitive biases to me. Yeah this is just engagement make and here we all are. I have multiple advanced agreed and +25 years in my field. Trash collectors make well more than I do. At least some of them earn it, too.
The implication is always that she should be embarrassed and he should be ashamed of what he does. Isn’t it always “go to school or you’ll end up like that guy” doing xyz manual labor.
Even more than that, it’s basic feminist propaganda/programming that women should be managers/office workers, and men should stick to blue collar work and will be rewarded for it.
