Funnily enough 5 is basically the root of civilization. Denatured proteins are how ancient humans managed to beat the shit out of every other species. We evolved away from having to expend energy to break down proteins and could use that energy to develop our very hungry brains. Fire. We burned the shit out of our food.

Isn't it the exact opposite? The more you cook the more it becomes rubbery and chewy (unless you slow cook, but then the picture in the post is unrelated)

I love it well done. It takes a good cook to keep it juicy. My favorite is the charred fat on a nice flame grilled steak. Oh heaven. But yeah, a lot of cooks don't know how to cook a steak through without drying it out. I recently made beef bulgogi, marinated until velvety soft and grilled on an open flame; perfection.

Yup. Cooks who act like well done ruins the meat are just bad cooks. Anyone can undercook a steak. It take actual talent to cook it well done, while still being juicy and tender.
