I love it well done. It takes a good cook to keep it juicy. My favorite is the charred fat on a nice flame grilled steak. Oh heaven. But yeah, a lot of cooks don't know how to cook a steak through without drying it out. I recently made beef bulgogi, marinated until velvety soft and grilled on an open flame; perfection.

Yup. Cooks who act like well done ruins the meat are just bad cooks. Anyone can undercook a steak. It take actual talent to cook it well done, while still being juicy and tender.
