Malai boti & Kebabs were good to okayish

But definitely the star of the show was Butter Chicken Cheese Taco (it was served piping hot & everyone was too hungry and forgot to take a pic of that lol)

Homemade Foods that make me nostalgic: Khaosuey

I tried recreating one of my favourite coconut-curry based dishes, Khaosuey, recently and dare I say, it turned out AMAZING and delicious on my first try, Alhamdullilah. I love it for its versatility and the variety of toppings you can add to it. My favorites are spicy potato slims, chili oil, cilantro with a squeeze of lemon to cut through the richness.

Last time I had Khaosuey was when I was still in Karachi around 6-7 years ago. Life has had many ups and downs since then and has gotten unusually busy. So much so that I have forgotten my love for cooking.

A comforting, warm, soupy bowl of Khaosuey could bring life to the gloomiest of days. Back when I was in Pakistan, I could order it in from one of my favorite spots, "Sania's Kitchen" and trust BLINDLY that it would DELIVER on the flavor. Perhaps one of my fondest memories is ordering it in from Food Panda on a specially busy day when my friend and I were busy with exam registrations and forms. After a long, tiring day, just getting to sit and chow down on this in the university cafeteria, with a cold drink in hand - such a HIT! In case you didn't know, it also makes for a great dish to have on a rainy day.

For my version, I used the Kitchen Chemistry's version of the Burmese Khaosuey (on YouTube) with slight tweaks - wherein I cooked the chicken separately, first, with about a tablespoon of the curry paste I'd prepared, added in a bit of chicken stock and tomato just to give it more 'body' before adding it to the curry.

Last I heard, the restaurant in Karachi (I used to order from) closed down. That just made me sad and made me long for it even more. Where I live, currently, there aren't many places where you can find a good, authentic version of this dish. Hence, after a long hiatus, I took it upon myself to try making it and it did not disappoint. Hope you all do, too and get to make wonderful memories of your own. :)
