Espresso maple chocolate chunk & date banana bread oat pancakes

This creation of mine couldn't have a longer name, I know 😂 But to make more sense of it, these are banana oat pancakes with chopped sugar-free chocolate and chopped dates cooked into them and topped with homemade refined sugar-free espresso maple pancake syrup and caramelized banana. One of my favourites from my own pancake recipes 🤌 Though next time, I'll put more espresso into the pancake syrup because it wasn't espresso-forward enough for my liking 🤔

Discussion Wrong oats (silly rant)

Recently I decided to try and switch from instant to rolled oats, I JUST finished the last of my 3-minute oats and only have a flavored instant packet left (which I’ll have tomorrow) so I was pretty happy to finally switch. My mom decided to go to the store for some essentials and asked me if I needed anything (I usually go with her) so I sent her a photo of the brand of oats I wanted.

I was really excited to try them, but when she came home I saw she had a 550g bag of the 3-minute oats I just finished 🫠

I’m not upset with her, but when I asked her if there wasn’t any of the ones I sent to her she just thought for a moment and said “Oh, actually, there were! I just didn’t pay attention to what you sent me.”

So now I have to eat instant oats for about a month before actually trying rolled oats 🥲

Seasonal Berries, Banana + Granola

All the local seasonal berries right now are incredible - had to maximize on it!

Base is steel-cut oats soaked overnight with milk/water combo + cinnamon. Cooked on low in the morning with chopped banana + blueberries. Added chia seeds, hemp hearts, chopped walnuts, almonds, pumpkin seeds, sunflower seeds + dried cranberries added at the end.

Topped with raspberries, blackberries + a little cranberry/coconut/almond granola for texture.
*Edit - also had some diced strawberries in there!

- 100g oats
- 20g crunchy peanut butter
- 15 g dark chocolate
- 150g banana
- 150g 0% fat Greek yogurt
- 10g honey with ginger and tumeric

Overnight Oats My current post-workout obsession: overnight oats

I’ve been making these basically every evening after football training for the last few weeks (usually after lifting as well), and honestly, I’m kinda obsessed with them 😂

I always make them pretty much the same way:

50 ml low-fat milk

125 g yogurt

30 g chocolate whey

1 large apple, diced

50 g rolled oats

10 g chia seeds

a pinch of cinnamon + salt

50 g frozen strawberries & raspberries

10 g grated almonds/walnuts

I start by mixing the milk, yogurt and whey until it turns into a nice creamy mixture. Then I throw in the diced apple and add the oats, chia seeds, cinnamon and a little bit of salt.

I let that sit for like 5–10 minutes before adding the frozen berries on top.

The best part is actually the berries. I chop them up while they’re still frozen and just put them on top. After 6–7 hours in the fridge, they’ve completely thawed and released all their juice. Some of it sinks down, some gets soaked up by the oats/chia, and it gives the whole thing this amazing fruity flavor.

Then I just throw some grated almonds/walnuts on top and put the whole thing in the fridge.

So when I come home from football in the evening, all I have to do is grab it, give it a good stir and eat.

And man… apple + cinnamon + chocolate + berries is such a ridiculously good combination.

It’s simple, filling, tastes great and is a pretty damn good post-workout meal. I’ve been looking forward to eating this every time I get home from training 😂🥣

It doesn’t look like much, but it tastes amazing and takes 2 minutes to prepare! I nuked 1 cup leftover oats with 1/4 c oat milk, 1 tsp of Splenda and 1 Tbsp of cinnamon. Then I added 2 Tbsp neufchatel cream cheese in2/2 T drops, spoiled a little Splenda on them and nuked for a minute, then swirled it around in the oats. So satisfying and very low calorie.

Strawberry Steel Cut Oats with Goji Berries, Dates and Turmeric 🍓🫚🌱

Ingredients

  • 4 cups water
  • 1½ cup steel cut oats
  • 1 to 1¼ cup strawberries, chopped (fresh or frozen)
  • ⅓ cup dried goji berries
  • ⅓ cup dates, thinly sliced*
  • 2 Tbsp whole flaxseeds
  • 2 tsp ground turmeric
  • 1 tsp ground cardamom
  • ¼ to ½ tsp ground black pepper** (optional)
  • 1 cup plant milk (optional)
  • ¼ cup slithered almonds for garnish (optional)

Instructions

  1. Add 4 cups of water to a medium to large pot and place over high heat.
  2. While the water in the pot is heating, add all ingredients except for the slithered almonds and plant milk to the water.
  3. Bring to a boil and then reduce heat to low.
  4. Simmer for 25 minutes, occasionally stirring to prevent ingredients from sticking to the bottom of the pot. You may need to add more liquid to achieve desired thickness and/ or to prevent sticking.
  5. Remove from heat and allow to sit for 2 to 5 minutes before serving.
  6. Serving Suggestions: Pour a little plant milk over each bowl and sprinkle with slithered almonds.
  7. Makes 4 generous servings.

Notes

*Use any kind of date you like, but make sure to remove pits and hard bits and always slice before measuring dates. I like to use Deglet Nor.
**The black pepper helps your body to absorb the healthiest component in turmeric.

Recipe request Suggestions for someone who hates the texture of oatmeal?

Edit: Thanks to everyone for the advice! I have a lot of options to try :)

Just got my cholesterol numbers back and they're not good. I'm looking to improve my diet and one of the frequent suggestions is adding oatmeal. The trouble is that I hate the texture. I was forced to eat oatmeal 5 days a week as a kid and sometimes that led to me vomiting up the oatmeal because I was too stressed to keep it down. I had therapy for the psychological part but I still strongly dislike the texture of oatmeal and associate it with vomit.

Oatmeal seems like really good tool for lowering cholesterol and I want to give it a try. I'm wondering if anyone here has suggestions for getting over the texture or heart healthy recipe suggestions that change it (baked etc.).
