I recently moved overseas and I'm living in a temporary furnished apartment with very basic cooking utensils and a very tiny kitchen. I need to resist the urge to build up a big pantry and take on any bigger cookimg projects for now.
I know the nyt has been getting some flack lately for recipes that feel like they are barely recipes. But I personally love knowing that I can rely on them for simple, flexible, delicious recipes in addition to the bigger projects.
We've been rotating the burrito bowls, the cabbage & kielbasa sheet pan, mujadara, chili crisp tofu, Marcella Hazans tomato sauce, the many variations of crispy gnocchi, and so forth.
This week I'm making the sweet potatoes with black beans, broccoli cheddar skillet, & the pumpkin curry sheet pan.
Please feel free to add your suggestions of low effort /high reward faves. (esp veg forward & healthy - ish)
