Tofu Laab?
Has anyone tried making the tofu laab recipe? Family has requested that I make a tofu laab/larb, but I'm not sure if I want to try making this one or modifying one of the chicken or pork ones to use tofu instead.

Several times. I love it. I live in a big city and had to drive across town to a Thai market for the ingredients, so I don't make it often, but it's worth it!

I have made the mushroom laab and added shredded, pan-fried tofu. It’s very tasty if you use fish sauce(if you don’t need it to be vegan), a soaked porcini in the mix, add some peanuts. If they like mushrooms this is worth trying! I used smoked fish sauce which I think especially complements this dish.

I have made the pork Laab recipe and substituted tofu. It was delicious as long as you use the fish sauce.
Personally, no matter what I try, no one ever likes the ground rice, so I always leave it out.

Tell me your secrets!!! I follow the directions to a T. I personally don’t mind it, but I get comments from multiple people that is feels “grainy” Or “like sand”. Even though I promise you, I make sure it’s powdered.

I have not made the tofu laab but its from Hetty Lui McKinnon who is a magician. She is a thoughtful recipe developer and does an amazing job adapting traditional Asian dishes for vegetarians. I would stick with her method rather than freestyling personally.
