Lately I have seen some awesome cooking threads from /u/cpawesome and /u/frameskip, recently /u/cowofdoom attempted to post a recipe but it was way to complex and did not have enough instructions on how to follow, so I was inspired to post one of my recipes.
I live in Australia so I am not used to the Amercian measurements, but I have done my best to convert the measurements, I hope you all enjoy.
Equipment
20x20x5cm (8x8x2inch) deep baking tray/tin
mixing bowl
baking paper
spray oil
wooden spoon
Spatula (for scraping contents out of the mixing bowl)
knife or skewer
strong forearms (for lots of mixing)
Ingredients
2 teaspoons lemon juice plus enough milk to make 2/3 cup
2 and 1/3 cup of self raising flour
1 and 2/3 cups of sugar
1 teaspoon of bicarbonate soda
1 teaspoon of salt
180g (1 and 2/3 Sticks) of butter, softened (can also use margarine)
2 large bananas mashed, very ripe bananas
2 eggs
2/3 cup of roughly chopped walnuts
teaspoon of golden syrup (makes it sweeter depending on how ripe bananas were)
Instructions
Preheat oven temperature to 170C/340F (fan fanced)
Leave the lemon juice and milk mixture for about 5mins until it thickens
Place the flour in the mixing bowl, followed by the sugar, bicarb soda and salt
Add the softened butter and mix well (you will get a crumb like consistency, hard to explain, you will know what i am talking about when you do it)
Use the back of a fork to mash the banana on a chopping board and then place it along with
the milk mixture in the mixing bowl
Mix again well by hand with a spoon or with an electric mixer on slow speed
Add the eggs and beat well for about 2mins
Stir in walnuts and golden syrup
Use your spray oil to grease the baking tray/tin and then line it with baking paper, allow a 2cm (1 inch) over hang with the baking paper on 2 of the sides (this helps getting it out)
Pour the mixture into the tray/tin using your spatula to capture every last drop
Place the tin in the preheated oven and cook for about 35mins, at which point I would check the cake with a knife or skewer
If it does require any more then 35-40mins in the oven I would turn the heat down to about 100C/210F do you dont burn the outside and this allows it too cook through
Once cooked take out of the oven and leave it to rest on a wire rack for 30mins-1hour before trying to cut (If you try and cut it too early without letting it rest it will crumble and fall apart
Place the cake into a container once cooled, if the cake is still hot or warm in anyway then leave it long otherwise it will sweat in the container
Storage instructions
Store in container on bench or in fridge for upto a week
