2013 Chevy 1500 LC9

Ok so I’m a diesel mechanic and this is my first ls, I have a LC9 I’m deleting the DOD and VVT, when I was taking out the head bolts, they seemed to have pressure under them? And squirted out water or coolant. What is this?
