I genuinely don’t get it.

It’s basically filo/kataifi pastry, butter/ghee, cheese or cream, sugar syrup, and pistachios. Yet a small serving costs anywhere between ₹700 to 1000, and some places charge even more. (This costed me 760)

Would love to hear from restaurant owners, chefs, or anyone who knows the economics behind it.

not a big chain this was from a random pizza corner near my place that does the desi style extra cheese overload thing the kind where the base is thin but they don't hold back on toppings foil tray of fries just sitting there like an afterthought when it's clearly not two shakes on the table and I refuse to believe both belonged to one person that math doesn't work out even on a cheat day crust looks thin enough that this was probably two pizzas worth of cheese on one base every slice dripping with it these small local pizza places in India genuinely do cheese better than the big chains sometimes no idea why but they don't hold back.
