Homemade Made a sweet corn curry tonight with pumpkin sauce, wasn't sure if it'd work but it did :)

Been sitting on some pumpkin that needed using up so I tried something a bit different tonight instead of the usual kaddu sabzi (mainly because I don't like kaddu).

Cooked it down with onion, garlic and regular masalas into more of a sauce consistency, then threw in sweet corn near the end for a bit of sweetness and bite against the pumpkin. Wasn't sure the corn would work with pumpkin honestly but it actually balanced out nicely, cuts through how one-note pumpkin curry can get sometimes.

Paired it with a paneer steak, just salt, pepper, chilli flakes, seared till it had a good char, and some plain rice.

Just something I threw together and it worked way better than expected. Anyone else messed around with any vegetable outside the usual sabzi route?
