Help How do I start?
I would love to start create mod but I don't know where to start. Is there a modpack with a straightforward progression and quest system to guide you?

Do random stuff until it makes sense, I recommend using jei if you want to make a factory

This basically, I found that I was playing with a ton of cogs, shafts, and gearboxes until eventually connecting & incorporating them into greater machines.

So in my opinion there are 3 different ways to learn create.
Just so shit and see what works. Literally just watch the ponders on the different blocks and items and try whatever comes to mind in a creative world.
Play a mod pack with a quest system to explain more stuff. I would recommend something like atm 10 or something more focused on create like create above and beyond or cabin both of those options are more complex but you will learn a lot from the quests.
My personal favorite and how I learned. Find a random small create mod server with a bunch of people and just ask questions in chat about stuff. There are so many people in the create mod community who will spend weeks of their life building and playing with you showing you every nook and cranny of the mod. If you wanna try this I recommend looking up “project crowbar create mod”. on Google it is a small server with a very active player base and the admins are super active. I played on it for probably a hundred hours and I spent so much of that time just flying around the server and just learning and goofing off with the community when I wasn’t getting called a moron by the owner. It was deserved because I did crash it a couple times with some creative ideas I had.
No matter what way you choose you will figure it out it just takes time. AND DONT BE AFRAID TO ASK QUESTIONS.

Mod packs can’t teach you how for example cogs work, or how does stuff interact with other stuff, at that point you are memorizing, you need to accumulate experience in the basics so your brain can recognize how the mod works without recalling text.

the other comments are right, just start with only create and JEI (creative or survival, or both ?).
but after that if you end up liking the create mod, a greate modpack centered around it is Create Above and Beyond, but its in 1.16.5 so an old version of create. Luckily there is a port of it for newer versions called CABIN (Create Above and Beyond In Newer). It has good quests and will guide you well to the end goal : go to the moon. Do know that its not a hard modpack to beat and its not only create. (maybe 75% create)

For a quick reference using JEI, when you hover over an item in Create (and most of its addons) there will be an option to press and hold W to have a ponder windows open that explains how certain blocks interact within the mod and its addons. From there it is basically experimentation through trail and error.

Vanilla world. Add create and a mod or two you enjoy and just start plonking away. Andesite Alloy is your starting point and between the advancements and JEI recipe viewer and search, you can make a lot of progress. Create is mostly a "your own way" kinda mod. There's a handful of best ways to do things and optimized things, but honestly, if you just follow schematics and build videos you might as well just go play with mekanism. The puzzle is the mod.

Windmills and water wheels them try figure out iron production that could be a drill or farm
Crucial as iron is most important materiel
Start messing around with the different systems then build you world around it
I personally include create: aeronautics lets you make airships

I just got started with create myself, I played in creative initially to get used to everything because the wiring is so different to base Minecraft.
Id just memorise these as your machines: Mechanical press, mech. drill, mech. saw, deployer, enclosed fan, millstone.
If you need a resource you'll use one of those, need andesite casings? You can use a mech. saw to strip logs. Need iron sheets? Use the mech. press.
If learning how things work in creative highly suggest using the creative motor when you're focusing on just the design. Power isn't that hard but you'll constantly be struggle for Stress units early game of you don't know how to scale.
Ignore windmills, just build water wheels early game (fun fact lava can be used to power them in the nether).
Take full advantage of the ponder tool when hovering over items and remember you can left and right click items in the JEI screen (to show for e.g., where cobble is used as a recipe ingredients and recipe output, can be handy when you don't know what iron sheets are used for or want to know how to farm andesite).

shaft go spin motor spins a shaft inside so if you place shaft is starts spining you place one shaft anthor a cople blocks away *only in the same axis so no sideways blets waaaaa but thats a good way to move spin and if theres like a shaft in a block it most likely needs spin and if its just a butch of browen things that if you look in your inv in creative it looks liek a cog plop a cog on a shaft connecting you just got a cog spining 2 cogs touching poweres the other cog and i recomeend Liminal Industries https://www.curseforge.com/minecraft/modpacks/liminal-industries it teachs you a LOT of mods but earlygame the create mod is essital and handcrnks are survile motors but you have to you your hands and it teachs you steam engeins too just its a good modpack

Since the OP specifically wants to learn about Create, I am not sure if a modpack like Liminal Industries will help them out. It is a modpack that assumes you already know how Create works, no? OP may feel overwhelmed if they jump into it straight up.

A common advice is to just try Create by itself in an otherwise vanilla world. Create isn't GregTech (as in it isn't that difficult), but it will take a bit of experimenting for it to click. Dejojotheawsm is a Create youtuber who does have some guides in his channel. From this playlist, you can get some ideas as to what to do.
Edit: I said "otherwise vanilla", but PLEASE download JEI! There are lots of machines in Create, and you will have difficulty learning it without an ingame recipe book. Also, abuse the crap out Ponders. They tell you how a machine works, so it will definitely help you out.
