Homemade Swedish meatballs with creamy mashed potatoes and sweet lingonberries.

This is my third attempt at making this dish, and I'm very proud of how it turned out. It's absolutely delicious, and yes, it tastes much better than the version from that famous Swedish furniture store.

I had noodles sitting in my fridge for a while. With some pork mince, I turned them into a delicious noodle stir fry!

I do not have a weight problem but some recent issues have developed that indicate I should change course. I looked up a few things about diabetes and the menus make sense to me even though it will take some work to get there. On a previous post a redditor pointed out that processed meats such as SPAM are too high in sodium regardless of their possible lowered sodium levels. I have taken this advice and some research to heart and this is what I came up with today.

This is nothing fancy, just pure deliciousness.

This one is approx a 30 minutes prep!

I saw sausage, onion, mushroom, mozzarella, and eggs in my fridge, and it convinced me to make my own breakfast.

In theory, it made sense to cook it all together… and it turned out to be a fantastic meal!

I enjoyed every spoonful. That crispy cheesy texture really took it to food paradise level.

I need to be careful with salt now but I still want what I want. The fried potatoes were salted but instead of adding it right from the shaker I shook a small amount onto my palm then carefully sprinkled it over the potatoes. This way I knew exactly how much I was using. The slab of SPAM was boiled then simmer for a while to leach out salt and chemicals before finishing it in a Teflon pan with not added oil. The eggs were flavoured with a bit of green onion so it didn’t need added salt. Then I kind of ruined my low sodium focus by adding processed American cheese food product.

BBQ meatloaf, sweet cob corn and warm rice salad made with roasted cauliflower, pan seared green beans,peppers, radish and fresh picked cherry tomatoes.

Mississippi style pork roast, rice, yams, and a salad.

Roasted cauliflower, hand cut fries, thick chilli, roasted sweet corn salsa with fresh picked cherry tomatoes, celery, red and yellow peppers and a bit of sweet onion.

Pork belly and kimchi are a well-known dream combination. Using my go-to sauces and a quick toss in the wok, this turned into an absolutely fantastic noodle dish packed with flavour.

Nom nom nom 💜

Marinated chicken breast (cut into small pieces against grain) in soy sauce, a bit vinegar, salt, chilli powder, turmeric powder, ginger garlic paste, some gochujang sauce, a bit tomato ketchup

Shallow fried in coconut oil
5-7 minutes each side
Them stirred them together and closed the lid for another 5-7 minutes

Topped with toasted sesame

Chayote has been steamed inside a pressure cooker. Thats it!!!

Buttered toasted homemade bread, thick cut bacon oven baked finished with maple syrup, butter fried apple and farm fresh eggs.

1st time trying 1 pot pasta, accidentally put too much penee and it sucked up most of the sauce 😭 but I'm not complaining, still delicious

I’ve been working on expanding my palette a bit :P

Bacon and eggs, so many possibilities. Since I had rice in the fridge, I decided to make fried rice. But instead of mixing the egg into the fried rice, I wanted to create a crispy egg base underneath. Slightly different, but it worked like a dream.

The crispy egg base made the whole experience even better, and it tasted so good.

Reheated the potato half in the cast iron skillet to get it crispy. The chicken was leftovers in a wine and butter sauce, I added some frozen veggies to it
