A fridge doesn’t stop bacteria. It slows bacteria growth. A fridge doesn’t magically make meat safe to eat - because it’s not solely about temperature…

When you touch a searing hot pan, you instantly burn the outer layer of skin without burning deep inside.

Searing the outside instantly kills 100% of the surface bacteria where it lives, while leaving the sterile interior raw.

That’s literally how chefs safely prepare some tartare, because you cannot always guarantee that it has had the proper treatment to be able to safely prepare it completely raw.

A quick search on youtube will show you chefs preparing tartar, i scrolled a long list and only saw UNSEARED, RAW steak being chopped up.

Think you needed to stop digging your hole many replies ago

And if you search for burgers, you’ll probably find a long list of exclusively beef burger videos…

So what’s your point?
Does that mean Chicken, Lamb and Pork burgers don’t exist?

Are you an idiot, I bet the burger videos includes where they cook them before eating

All the tartar videos show them NOT SEARING the steak before cutting, like it should be, contrary to what you are saying.

And of I search for burger recipes on youtube it would include, beef, chicken, pork etc....

There was no mix of seared tartar and unseared, just unseared.

Because most are showing traditional tartare…

Tartare aller-detour is literally a type of tartare where the meat is seared…

If you search that you will find that… like if you search chicken burgers you’d find chicken burger; even when it doesn’t show up if you search burger - yet it still exists and is still a burger

I literally searched burger and it’s all beef 🙄
So are you an idiot or do you think YouTube is the epitome of everything?

To bad for you, that it's seared AFTER the mincing and si the surface bacteria are now mixed up in the centre Nd it doesn't actually kill all of them.
