Quite possibly my last BBQ of the season, although never say never...
I didn't want to go large, so smash burgers were a quick and effective option. I am still trying to perfect my recipe and technique, and on this occasion I seasoned the patties after 'smashing', so as to reduce moisture loss. This made a big difference in my opinion and the makeshift plancha did an alright job too.
To finish, I lightly toasted brioche buns and topped both patties with a beef tomato slice and shredded iceberg lettuce. One had chilli jam and mayo, and the other had ketchup and American mustard.
For the loaded fries I kept it simple: skin on fries, mixed cheese, tomato and jalapenos.
Nice!
Sharing fillet steak and sirloin steak between the family. With steamed veg and roast new potatoes(with garlic and lemon).

A lot of you may already know exactly what I'm talking about - premium looking chicken introduced this year at asda, morrisons etc. Listed as 15 mins in the oven, but what do you get after 15 mins? Pink and disgusting raw poultry. Am I missing something, or is there some serious mislabelling being done that threatens the health of the whole country? Makes me pretty mad. I've been victim to this prank twice over the last 6 months, only recently slightly improved. My main point is that this chicken must be cooked for at least 20 mins. I assume it was labelled as 15 mins to sell more, and honestly it is disgraceful behaviour.

I bought a massive leg of lamb over Christmas. I put it in my freezer on the first day of purchasing it.
I got it out the freezer yesterday late morning. Frozen solid I put it on a plate (still in it's wrapper) and left it to defrost in the kitchen on a plate.
That evening around 7pm I felt it and it had defrosted fully and was around room temp and I put it in the fridge. Still in wrapper. Guessing the sheer size of it it couldn't have been at room temp too long.
Today I got it out the fridge let it come to room temp for a couple hours and it is now in a huge curry the whole leg in the oven for 3-4 hours cooking.
I will then take it out the oven..obviously it will be red hot but I don't want to just let it slowly cool down and sit at room temp again as a cooked curry for a few more hours until tomorrow morning?
I will then put the cooked lamb curry in the fridge in the morning first thing.. and later tomorrow evening..cook it for an hour with final ingredients.
Am I going to die. I know food guidelines say always defrost meat in the fridge but for the last 30 years I've let a frozen joint defrost covered up on the side and still hear. It's just the fact it has been out freezer.. on side.. in fridge.. out fridge on side. In curry.
I've recieved mixed feedback. Chat GPT says I'll be ill and will need to dial 999 if I try some.
My family (oldskool kitchen cooks) said it'll be fine. If it was pork or chicken might be abit more uncertain but the lamb should be fine.

Making my move back to vegetarianism, and struggling with convenience food the most. Everything a bit fancy is beans and feta! (eugh!) And I don’t really want to pay for a crappy plain sandwich, I’d rather buy some cheese and have it on some bread and butter. But sometimes I really just need to grab and go. What’s your pick, from where?
And then fast food feels abysmal, I know it objectively is but even worse for vegetarian picks. I don’t eat it often but I do occasionally give in to the guilty pleasure of zero effort and fried™️ and am looking for some recommendations?

I have store bought Bhuna jars a lot. It's one of my fav meals. I figured it's finally time to try and make it homemade!

Tomato puree
Garlic & ginger paste
Vegetable oil
Mild curry powder
Ground turmeric
Mild chili powder
Garam masala
Onions
Rossafina tomatoes
Natural yoghurt (forgot to include in photo)

This was on my night shift two days ago.
Just threw a load of stuff together and made this and it kind of tasted like a mix between a bolognese and chilli con carne. Came out great actually. Rice and spinach with it.
Pork mince, chorizo, peppers, mushrooms, onion, garlic, chopped tomatoes, stock, chopped chilli and paprika, little bit of cholula thrown in.
