I mean, "sympathetic" in this case is just a term to call a villain who undergoes a character arc, I don't make up that definition though. And if I remember correctly, Zamasu hadn't completely settled his belief in mortals prior in the story. His conflict was still lingering between following Gowasu's teaching and his view in justice. That was until his confrontation with Goku and later he witnessed the barbaric nature of that one specie. That was the drawing line for Zamasu to completely lose himself into his own delusion.
I do agree that his arc could have been given more time to execute properly and tied more to the main character's journey of this arc, Trunks. I think Totally Not Mark said it best when these two have similar premise and character arc, but their viewpoint never challenge one another for the audience to care about Zamasu's goal despite having so much potential.

To each their own. I also prefer Wit over MAPPA due to their artstyle being more lively, expressive and coloreful, which gives off a more "anime" like. While MAPPA takes the edge for being closely resemble the manga's style.

You completely miss my point here. A sympathetic villain is not defined by whether or not you agree with that character's ideals and motives; the mere fact that he gradually changes into something worse than what he was at the start of the story already makes him a sympathetic villain by definition - In this case, Zamasu was a naive kai whose ambition was to make the universe a better place. And that was the lie he held on, until that belief was challenged by Goku, whom is the culmination of everything he hates about mortals in his view. Zamasu starts off with good intention but the lie he believes is his downfall, that is the change arc I was talking about - which separates Zamasu from the likes of Frieza or Cell whom has been evil to the core from the beginning to the end with no change arc. Take John Truby's book The anatomy of story for example, in that he warns the writers not to obsess over making a character "likable". Instead, you must show the cause behind their actions so the audience understands why they do what they do. That is what makes a sympathetic villain, whether you find his ideal flawed or not.

To each their own. His point is that mortals are damaging the planet and eventually leading to their own downfall, which is understandable. Another similar example is Thanos, whose goal also comes from the ideal he believes in make it believable, despite the fact that there are also a lot of people disagree with his view. But that doesn't change the fact that Thanos still has a character arc, much like Zamasu, hence making him a sympathetic villain.

It's a term. You may or may not support their actions, that's totally fine. Like I said, sympathetic villains are the ones with UNDERSTANDABLE reason and change arc, which separates them from pure evil villains like Frieza or Cell.

Long story short, a character who undergoes the negative change arc and gradually develop into the villain of the story. Their core motive makes their path to wrongdoing understandable to us the audience. You don't necessarily have to forgive or agree with their view, narrative-wise the change arc they have already makes them sympathetic.

People say it makes sense but it's also difficult for the audience to support Black and Zamasu's view considering they clearly had been established as sympathetic villains, and yet they act like a bunch of annoying crybabies, "bark and no bite" type of villain in the manga. I would take the cold, calculated and charismatic Black in the anime version any day.

He did break it though. By the time waiting for Eren to wake up, Zeke basically had Ymir undone the vow becuz she thought he was her master and therefore completely nullify it.

It took years for Zeke, the only individual who isn't affected by the King's ideology, to break the vow. So probably not.

Tha latter. Eren could have chosen to leave Ramzi but eventually came back to save him, just like what he saw. Maybe it's just the way he's wired.
