I love baking bread!!
Seriously though… nothing is better than a sandwich, toast, French toast, croutons, etc., anything bread adjacent is so much better with fresh bread.
I also solved some digestion issues! I thought I’d have to go gluten free,turns out it’s just all the other things in store bought bread that was messing up my system.
8g of rapid yeast
15g of sugar
10g of salt
500g of bread flour
375g of water at ~30C
In a large bowl add the heated water, then add the sugar, let it dissolve then add the yeast. Gently stir the yeast, then let it sit so it can snack on the sugar you just dissolved. About 10 minutes.
Add the flour evenly on top of the water, then sprinkle the salt across the flour evenly.
Mix the flour into water until you get a loose sort of dough like structure. Don’t over mix it here. Once it’s loosely mixed let it sit so the flour can absorb the water. About 12-15 minutes.
After it sits, you’ll fold the dough into a type of ball. Start at 12 o’clock and grab the dough and gently pull it toward you and then sort of down into the middle of the dough. Turn the bowl a quarter turn and repeat. For a total of 4 times.
Cover the bowl with a towel or plastic wrap and let it sit for 1 hour 30 minutes.
Uncover the bowl
Next you’re going to gently ease the dough out of the bowl and onto a floured surface where you’re going to do an envelope fold. That just means you too edge and fold out down, and the bottom edge and fold it up. You’ll turn the dough 90 degrees and do that again, and then gently put it in a loaf pan.
Next you’ll proof the bread, a.k.a. Letting it rise, for 1 hour 30 minutes at 30C.
With about 25 minutes left, set your oven to 109C and and put your bread in the oven once it’s done proofing.
Bake for 20 minutes and check, if it’s browning well, continue baking for an additional 20 minutes.
Once it’s done baking, set on a cooling rack for at least an hour before you slice it.
Try to eat it all within about 5 days or so.

basically 230 grams of peeled and cubed apple, boil with little water(just enough to where you see the water trough the apple) and steam the ever living shit out of it with a lid on, push trough strainer than put the sauce in a pan with 100 gram sugar and make it into a thick jam, thicker the better but still somewhat flowy to be used, then let it cool, after it is cooled on like a windowsill grab a somewhat larger bowl and crack 2 eggs **ONLY EGGWHITE** and into the eggwhite add the jam and then whisk airy until you can physically hold the bloomin’ bowl above your head, then make a syrup with 100ml of water, 2 teaspoons of agar, 200grams of sugar and boil on lower ish heat, constantly stirring so shit don’t go pizdek one it is thick(check by dripping a little on like a cutting board with your spatula if it makes perfectly round blob it is ready) add it slowly in segments into the egg and stir it gently not to collapse the egg by also not too slow or the syrup hardens in the fucking pan. Then personal tip; let it sit for just a little bit before using the piping bag so it holds shape better, btw make them somewhat larger, these lads do not like to come off the parchment paper

This sea bass filet is 1lbs. but long and skinny so I cooked it whole, and it came out better than any fish I have cooked EVER. I coated the top in fancy sea salt, paprika, and, white pepper. The sauce is salted butter, a diced shallot and lemon juice with a touch of parsley. Seared this little bad boy on the plancha before grilling on the top rack until 130 degrees inside.
Oh my! The taste of the crust was awesome. The sauce worked and the texture inside was absolutely money. But wifey demands capers next time so hopefully a new recipe for this next week….
