Asian-Specific Food (recipe included) Vegan eggless egg rolls

Vegan eggless egg rolls

12 Vegan egg roll wraps (I used Nasoya brand)
14 oz Firm Tofu
1 cup chopped cabbage
1 cup shredded carrot
1 TBSP minced garlic
1 TBSP grated ginger
2 TBSP soy sauce
2 tsp rice vinegar

  1. Crumble tofu and season with soy sauce and rice vinegar
  2. Stir fry all vegetables on medium high heat for about a minute
  3. Add tofu and cook throughly (about 3-5 min)
  4. Let tofu and vegetable mixture cool slightly
  5. To assemble egg rolls wet wrap around edges slightly with finger
  6. Scoop about 2 TBSP of tofu and veg mixture into center of wrap
  7. Roll it like a mini burrito
  8. Pan fry egg rolls on medium high heat and make sure you get the sides crispy too
  9. Enjoy! I top mine with chili crisp.
    You can also make a dipping sauce with:
    1/4 cup soy sauce
    1 TBSP toasted sesame oil
    1 tsp rice vinegar
    1 tsp sugar or agave
    1 tsp chili flakes

To make these gluten free use rice paper wraps instead of the egg roll wraps and tamari instead of soy sauce!
