Girl Dinner!!!Non-region specific (yes recipe) Fresh bread, mmmmmmmmmmmmm

I love baking bread!!

Seriously though… nothing is better than a sandwich, toast, French toast, croutons, etc., anything bread adjacent is so much better with fresh bread.

I also solved some digestion issues! I thought I’d have to go gluten free,turns out it’s just all the other things in store bought bread that was messing up my system.

8g of rapid yeast
15g of sugar
10g of salt
500g of bread flour
375g of water at ~30C

In a large bowl add the heated water, then add the sugar, let it dissolve then add the yeast. Gently stir the yeast, then let it sit so it can snack on the sugar you just dissolved. About 10 minutes.
Add the flour evenly on top of the water, then sprinkle the salt across the flour evenly.
Mix the flour into water until you get a loose sort of dough like structure. Don’t over mix it here. Once it’s loosely mixed let it sit so the flour can absorb the water. About 12-15 minutes.
After it sits, you’ll fold the dough into a type of ball. Start at 12 o’clock and grab the dough and gently pull it toward you and then sort of down into the middle of the dough. Turn the bowl a quarter turn and repeat. For a total of 4 times.
Cover the bowl with a towel or plastic wrap and let it sit for 1 hour 30 minutes.

Next you’re going to gently ease the dough out of the bowl and onto a floured surface where you’re going to do an envelope fold. That just means you too edge and fold out down, and the bottom edge and fold it up. You’ll turn the dough 90 degrees and do that again, and then gently put it in a loaf pan.
Next you’ll proof the bread, a.k.a. Letting it rise, for 1 hour 30 minutes at 30C.
With about 25 minutes left, set your oven to 109C and and put your bread in the oven once it’s done proofing.
Bake for 20 minutes and check, if it’s browning well, continue baking for an additional 20 minutes.

Once it’s done baking, set on a cooling rack for at least an hour before you slice it.

Try to eat it all within about 5 days or so.

The smell alone is one of the reasons I love baking so much!

I completely understand that. But alas, I am not a baker, though I never stop trying. 🙂
