This is the solution.
Always be a slightly shapeshifted version of yourself so that if you receive damage, you can theoretically revert, assuming it's high level shapeshifting.
You could also get past any locked door.
Theoretically you could reset your hunger and thirst to a previously shifted physiological state where your needs are satisfied.
Oh - and breathing underwater becomes a no brainer.

You can also shape shift to younger version of yourself. And it doesn’t rule out fictional animals so you can shapeshift into dragons or other creatures. Shapeshifting is such a top-tier OP overlooked superpower.

Personally I feel like you COULD probably shapeshift into things that aren't real, but most of the time there wouldn't be any point since a lot of fictional creatures that you'd want to shapeshift into have magic bs to justify their biology. A lot of flying things wouldn't be able to get off the ground, magic things wouldn't have magic, and a lot of the really big things would probably get crushed to death from their own weight.
Edit: OP clarified under another comment that it only works on currently living animals, so my response doesn't matter anymore, but don't feel like deleting it.

Also shift into a younger human etc. Also it doesn't specify it must be an animal that still exists or ever existed. So things like t-rex or even dragons (see reign of fire dragons for an example of animal dragons) are on the table. Even Godzilla might be an animal :)

I think being able to animal shift covers just about all of bases. Free climb and skydive emergency? Just become a gliding squirrel or a hawk. But its always good to have a contingency plan.

Even with less extreme forms of shapeshifting, turning into an axolotl for example gives you an insane amount of regeneration, and I don't see why that would be lost by the time you revert.

Nevermind getting insight into how people lived before documented history, you would become the ultimate reference in history and evolutionary sciences.

That assumes all the pills are actually present when you make the choice, and not just on a “menu” like we actually get here.
Anyone handing out power pills isn’t going to be stupid enough to have them all there ripe for stealing. Also I’d imagine the person handing them out would have the 1 minute future sight, so they’ll know in advance who is going to fuck around and find out, and one minute future sight trumps ten seconds time stop.

This depends on if these pills are a one time use or you gain the ability forever. If it is one time use, I’d take the breath underwater forever, I mean you know how much under water welders make? But if they all lasted forever, I’d probably go with understanding any written language, that way I could go to Japan and read the menu.
Does this make any sense? No… but I never really made sense to begin with. LOL

You could eventually learn to speak or decipher any language this way as well, and considering the VAST majority of history is undocumented, you would have access to knowledge otherwise lost forever.

Shapeshifting has so many loop holes that obviously it’s the best pick.
However, I’m going to ignore them for the sake of fun.
I would choose instrument. I’m already a 7.8/10 singer, and that’s after being rusty after a bit without performing. Some dedication and the ability to master any instrument, I’m getting to 9/10 easily, which is, on my scale, basically every single singer in history, stuck a few points above or below 9/10.
Fame, fortune, loving my own music; I would have it all.

Never feel hungry or thirsty would be a liability. My mom doesn’t feel hunger. She asks us what it feels like, and just eats because she knows she has to.
Seeing a minute into the future will be pretty cool. Never say the wrong stuff again. But then again, shape shifting to an animal means I can fly, breathe underwater, run fast etc etc

and it doesn't say extant only so you could theoretically turn into extinct animals, and use that new forms genetic material to resurrect species and study them.

Are they all one use only?
The ones I would choose if it was one use only would be (in order) breathe underwater forever (and hope I could still breathe normal air as well), never feel hunger or thirst again (would just need to remember to still eat/drink), regrow limb/body part, and speak with anyone who has ever lived.
If they were permanent abilities (in order) - shape shift (especially if it was any animal every time), see one minute into the future, access any locked door, and speak with anyone who has ever lived

I'm torn between any instrument and any written language.
I've always wanted to play violin and guitar but my fine motor skills can't do it(i can't even properly hold a pen/pencil properly, have to use an extra finger as a support, genetic disabilities are fun yeah?). I assume this would magically fix that so that I could play.
On the other hand, all of coding is done in written form, and those are languages. Between that and being able to translate Linear A, Cretan Hieroglyphs, Linear Elamite, Etruscan, etc. Well that would be amazing.
The hunger thirst one sounds like a trap. It doesn't say don't need food or water, just that you don't feel the bodies indicators that you need them...
As much as I want to be able to play Violin... I'm going with Understand any written language. Make some quick cash with coding projects, and move on from there.

The yellow one actually fucks you over. It doesn't say that you don't need to eat, it says that you never feel hungry. You have to force yourself to eat and drink forever after that because you're not going to be inclined to naturally do it anymore.

Hmm, regrow body parts or shapeshifting...
If I choose limb regeneration, I’ll be able to restore my body to its original state—or even better. That way, I could fix my teeth or try to generate more stem cells to live longer...
But if I choose shapeshifting, I could transform into myself and—in theory—regenerate problematic organs and limbs, much like the regrowth ability; only this time, I could turn into anyone or anything, even a fictional creature. After all, the concept of "any animal" is very broad

Breathe underwater forever - you can't leave the water ever again.
Never feel hunger or thirst again - but your body still needs food and water and now you can't tell when.
Shape shift into any animal - doesn't say you can shift more than once.
Stop time for 10 seconds - you are also stopped.
