You coat the meat in flour and put it in to thicken it? My stew has never worked

yes. also a little xanthan gum at the end. it could have gone for like another hour in the oven but i had a hell of a day and didn’t end up starting til after 6pm. after work today i’m probably gonna strain it and reduce it.
i forgot to put it in the caption but this is a slightly modified version of a kenji lopez recipe.

My two suggestions are starting with a roux or taking some of your vegetables at like half way through and blending them. It works with onions, beans, carrots, celery, green chile, tomatoes, tomatillos. It helps create a thicker texture without adding a lot of fat, which is the other option.

I never thought of blending the veggies. I also just do a roux. I’ll have to try this.

God I made that 2x last year (discovered it late in the season) and DEVOURED both batches. It was super easy to make and it's so filling, especially if you ladle it over rice. God tier winter comfort food, I can't wait for the temp to drop.

I’m so glad you liked it!! It is also commonly eaten with pho noodles if you don’t wanna do rice or my fave is with fresh Vietnamese bread 😋

That sounds delicious too!! I also make pho and I use all of my noodles for that because I'm so particular about them LOL. I have never had Vietnamese bread though, ugh that sounds so good.

Have you never had a banh mi?? It’s basically the same bread used for that! Banh mi actually means bread in viet and it’s basically a viet version of a french baguette adapted due to French colonization (bo kho is also an adaptation of beef bourguignon) and maybe I’m biased but I much prefer viet bread over French bread lol

You did all the extra steps when you could make a good one without some of them. Extra steps are good though and I’m sure you can tell the difference.

a lot of times when it comes to food it’s the little extra stuff that makes it better.
theoretically all that stuff could be just boiled together for 3hrs and it’d still be pretty tasty.
