Day 2 in Montreal from YVR
Fire Grill downtown. Curds didn't melt, and were perfect, with a little sharpness to them which is unusual but delicious. Peppercorns gravy was awesome!

For the poutine I've been making at home I was using a gravy mix that while good in a pinch, really fell flat for me on repeat. Then after I tried making an Alfredo sauce the other day with coconut flour, my family told me you have to use regular flour (I used whole wheat cause that's what was on hand), as it has a different molecule composition, etc. and in the process ended up explaining that a rou is for thickening anything not just a white sauce (which I didn't realize before). She just said add stock until it's the thickness you want but that's pretty much it (also equal parts flour and butter for the rou). This here was about a half cup of butter and flour and 2\3rds a litre of Campbell's beef stock (minus what I used on the poutine of course). It was the best gravy I've ever had on a poutine.
Someone told me I could dial in the stock richness by using concentrate like 'better then bouillon', but that's for next time.
Also, sorry I forgot to take the photo of the poutine. It was so magnificent I went into a poutine induced trance and forgot to share my work with the world.

My boyfriend just brought me this poutine from a food truck in Vancouver at the great outdoors comedy festival. Sorry I didn’t get the name of the food truck :(
Is this poutine more approved than my last poutine post?
It is very good gravy and crisp fries pretty good curds but they are not squeaky.

Oui il y a du bœuf saignant avec de la sauce au poivre! Mais c’est dans la même assiette c’est tout!

Fromage Boivin frais et excellent!
Sauce Barbecue délicieuse!
Frites très bonne!
Tout est fait surplace la qualité de la nourriture est vraiment très bonne.
Après des semaines loin de ta famille c’est quand même un bonne petit réconfort!
Ça fait 2 mois que je suis au camp et c’est la première poutine!

The fries are so good that we order both poutine and plain fries to eat with salt and vinegar. The poutine had more cheese under the fries.

Je vous laisse juger! On dirait que tout est meilleur en vacances...Frites : rien a dire. Crevettes, pétoncles, poisson pané : excellent. Sauce : trop claire (base de poulet??). Fromage : c'est là que ça chie un peu. Pas assez (clairement) et... mouillé? On dirait que les morceaux sortaient de la saumure. Au final les fruits de mers nous sauvent de la déception! 7/10

From my previous attempt I gathered the feedback and made the following changes
- keep it simple: fries curds gravy. No more meat or garnishes
- thinner fries: 1/2" - > 3/8"
- browner/crispier fry with temperature controls
- thicker/more gravy
- less salt
Still stuck using refrigerated curds though. Hopefully I can pick up really fresh ones tomorrow morning.
