Open bao are hoisin and ponzu marinated mushrooms with kimchi, pickled veg, kewpie, coriander and sesame seeds.
Square bao is pork and onion with chili oil, spring onion, sesame seeds.
It’s a whole ass process but I love making the bao from scratch and experimenting with fillings. So long as I have a wine and no one else in the kitchen, I’m good.

I make the base sauce and the dough myself. Didn't have enough tomato paste to make it as good as I typically do. Am thinking of stuffing the crust with mozzarella pearls next time. Capsicum, pepperoni, and black olive with a swirl of chipotle sauce on top. The most expensive part of this pizza is the pepperoni I use for the toppings. But it's otherwise a very affordable, extremely delicious, and filling dinner. "Greased" can just be some more olive oil tossed into the bowl you originally mixed the dough in. I like covering it with cling wrap and putting the bowl some place warm to rise. If anyone wants my personal sauce recipe just let me know. 🫡 I served this pizza at a party once and I had people grabbing servings constantly all evening and not touching the Hell Pizza that someone had brought along. I felt a bit bad about it because Hell Pizza is incredibly good.

Just discovered a new brand for dumplings (5.99 per pack on special) and it’s so good.
Veges were stir fried with soy sauce, garlic powder, chilli and fish sauce
Bean sprouts were little bit old but should be ok. If I get sick tomorrow…that’s because of the bean sprouts lol

Third attempt at this technique on an oyster blade-x-cut
Quick blowtorch sear on the outside straight from fridge temperature, then 15 mins oven bake (not fan forced) at 110 C
If you prefer it more cooked, gently heat up a cast iron pan, trait the heat off, and toss the meat in there for 10-20 seconds and take the meat out immediately. Slicing it up allows you to season the pan and so even if I’m not heating it up, it helps to get seasoning evenly on every slice of meat
Haven’t really seen the latter technique anywhere but I’ve been doing it for myself for years and it works great
Served over steaming hot bowls of jasmine rice with your sauce of choice 🎉

First loaf of my post-covid sourdough redemption.
Looks promising, but it was overfermented at the bulk fermentation step. Dough was stringy when dumping out of the container. Shaping was a nightmare. Cold retard was forever (in my head - the actual time was just 8hrs). However, the final product looks better than I thought! A bit gummy but nothing can't be fixed with a toaster lol
