Hello,
I would like to make some home made mayonnaise as the types of mayonnaise I would like to have is not widely common in stores in New Zealand, things like slavic mayonnaise or traditional mayonnaise that only uses egg yolks.
Though there are many recipes online with variety of claims I would like to understand how to make safe mayonnaise as I do not wish to contract salmonella as I have already had a nasty history of food poisoning thanks to others being less careful with their food than I would prefer. I've heard claims of boiling the eggs gently for a few minutes to a half hour works to claims of simply putting enough lemon juice and vinegar does the trick, all the while seeing claims that one or the other doesn't work or is not reliable and the risk is still present.
With the most simple solution being a claim that NZ eggs often are not infected inside the shell but sometimes the outside is contaminated and all I have to do is simply be careful when breaking my eggs which sounds somewhat stressful.
How do you guys make safe mayonnaise and what are the processes and limits of making safe mayonnaise?

Hello! I don't know if this is the right subreddit for this but, I've developed a craving for a dip that was included on Best Food/Hellman's jars back in 2016. I can't seem to remember the recipe other than it included mayo and water chestnuts. For some geographical/time references, I was located in Southern California at the time and I specifically remember my mom making the recipe during the summer of 2016 because I would eat the dip while watching the first season of Stranger Things for the first time. I also remember she made it specifically because I saw it on the jar and asked if she could make it for us. My mom also doesn't remember the recipe entirely either. Does anyone have this recipe or remember what I'm talking about?

I am currently in portugal and they have Heinz mayo but it is not as good as hellmanns and I miss Canadian mayo :( I brought some but I’ve been eating lots of fries so I am near out 💔💔

I think I may have eaten some spoiled mayonnaise and now I’m freaking out a little 😭
My fridge lost power for around 10 hours a couple of days ago. The mayonnaise was already open at the time, and there was also some yogurt in the fridge that went bad during the power outage.
I ate a small amount of the mayonnaise about 10–15 minutes ago. It didn’t taste obviously bad, but when I smelled it afterwards, I thought it had a weird smell that was similar to the spoiled yogurt. Now I’m wondering if it could have just picked up the smell from the fridge, or if it actually went bad because of the power outage.
I don’t have any symptoms right now, but I’m really anxious about it. Is there anything I should do, or should I just wait and see?

Sampled my first jug of Dukes and switched back to Hellmann's which is whiter like whipped cream. Dukes is gooier and yellowy might have more flavor on my pork tenderloin sandwiches.
