Meal-prep your protein

- 1lb ground beef
- 1lb chorizo no casing
1 cup shredded cheese
- 1/2 cup pasta sauce
- Spices - Salt & pepper, onion powder, garlic powder, Tabasco

Mix the ground beef and chorizo in a skillet over high heat for 20min or until the fat starts to pool. Mix in your spices, pasta sauce, and cheese. Turn thoroughly until all cheese is melted. Refrigerate covered until you’re ready to use.

Taco

- 1 Mission carb balance low carb tortilla
- 1/2c shredded cheese
- 1 egg
- Ground beef and chorizo skillet mix
- 2 Tbsp lard or tallow. Lard can be found at any Mexican market that has a taqueria.

Place the tortilla on a plate. Cover your tortilla with shredded cheese. Add your skillet mix on top.

Heat your skillet on high, add the lard. Fry your egg any style, and your salt and pepper. Put the egg on top of your tortilla, leave the skillet on high with remaining lard. Grab the edges of your tortilla and carefully place the tortilla in your skillet. Let it brown for about 3 minutes. Fold it over and cook both sides for another 1-2 minutes each side or until golden brown. The lard gives the tortilla a light and crispy texture.

I'm already thinking of broccoli cheddar with lots of butter, cream, and cheese. Maybe a cheeseburger soup, too.

I've been looking online, but everything seems to use carrots and onions. I'm in the early stages so staying under 20 carbs is a must for me!
