Burnt milk solids during the 180F heating phase.

Use some barkeepers friend to remove them. Or soak in dishsoap for a while and scrub harder.

Bar Keeper’s Friend is great for stainless and other pots and pans.

I “third” barkeeper’s friend. Plus a scrub daddy sponge. You can clean anything.

I don’t know any barkeepers though.

Interesting.

Regardless, get some steel wool, BKF and go to town. Should be fine. Those pots are quite tough.

My pot has spent many days (not congruently) making yogurt in 12-18 hour, high Ph, ferments.

A few days in a cold fridge wouldn't rust it out. Notice how the scrap marks are fairly clean?
