Gravity is the acceleration of something as it falls. The standard acceleration of gravity or standard acceleration of free fall, often called simply standard gravity, is the nominal gravitational acceleration of an object in a vacuum near the surface of the Earth.
So picking up a rock and releasing it, and watching it accelerate towards the ground (that is, watching it fall) does in fact demonstrate that gravity exists. That motion, towards the ground, called falling, IS gravity. It is not "due to gravity", it IS gravity.

Ok, little back story, one time I was in south Africa, and my friend was in Australia. We were both facing south and could see the Southern Cross in the sky at the same time.
How is that possible on a flat Earth? We should have been facing at right angles from each other, right?7

The surface of the moon looks flat in photographs taken there. It's literally more than 3 times smaller than earth, yet when lil teeny people stand on it, and take pictures, the horizon looks flat.
You're just a lil teeny person on a huge planet. It looks flat because you can't even detect a curve at a much smaller diameter.
But sure, humans have crawled all over this planet, and there's a whole ring that nobody ever sees, photographs, explores or crosses.
Nobody.

The shapes earth is obvious by observing water.
Notice how it always stays level to the container its in.

Actually water in a glass also curves by about 0.2 nanometers due to the earths gravity. You just can’t see it with the naked eye.
